Beef Stroganoff is often served with matchstick/straw potatoes. In Finland, sliced or cubed pickled beetroots and Russian pickled gherkins are traditional accompaniments for the dish. In my family, we often serve scalloped garlic potatoes

We make it over noodles and as a side dish have a nice French bread or dinner rolls, a jello of some kind or fruit, salad and a vegie like corn, peas, beans. Yum!

Since your dish already includes meat and noodles, you only need a vegetable side dish to complete your meal.

Poached Asparagus

1 lb. Fresh asparagus

Rinse and trim asparagus. Place asparagus and a small amount of water in a skillet; bring to a boil. Cook for 6-8 minutes or until crisp-tender.
Drain asparagus.

BRUSSELS SPROUTS WITH MUSHROOMS

4 c. Brussels sprouts, trimmed and halved
1/2 lb. whole mushrooms
5 tbsp. butter
1/2 c. chopped fresh parsley
Salt and pepper to taste
Fresh lemon juice

Cook Brussels sprouts in a pot of lightly salted boiling water for 15 minutes, or until fork-tender; strain through a colander, removing as much water as possible. Set aside. Melt butter in a large skillet over medium high heat. Cook and stir mushrooms until lightly browned. Toss Brussels sprouts with mushrooms, and sprinkle with parsley and lemon juice. Serve immediately.

GREEN BEANS ALMONDINE

1-1/2 lb. fresh green beans cut into 1-inch pieces (6 cups)
3 tsp. lemon juice
2 tsp. margarine, melted
1/4 c/ sliced almonds

Cook fresh green beans in a saucepan, covered, in a small amount of boiling water for 12 to 15 minutes or until crisp-tender. Drain well. Meanwhile, stir together lemon juice and melted margarine in a small bowl. Toast almonds in a small skillet over medium heat until golden, 5 to 7 minutes, stirring constantly. Pour lemon mixture over green beans; toss to coat. Gently stir in toasted almonds. Serve immediately. Makes 8 servings.

Plain rice. It's the best with plain rice in my opinion, I'm not a fan of the pasta as a side dish.
