First why do people take 35 dollar a kilo filet and wrap it in bacon- if I want to eat bacon it is cheaper. Makes the steak taste like bacon.
French pepper steak very easy.
for each steak put a table spoon of butter in the pan.
press green peppercorns into the steak and sprinkle with coarse black pepper.
Cook the steaks in the butter til rare.
Turn off the heat
Remove the steaks to a plate and put another plate over to keep them warm.
For each steak add 1 or 2 tablespoons of cognac and light a match to it.
Let it burn off (blow it out if it goes too long) and add for each steak 1 or 2 tablespoons of thick cream
Heat until thick
Any juice from the steak pour back into the sauce
To extend the sauce somewhat add a small amount of packaged green peppercorn sauce powder ( tsp or 2) and add more liquid. You can play with the amounts but this is the basic method.
Pour the sauce over the steak and serve.
Friday night favourite:
Have the butcher cut the filet into thin slices.
Have 2 or 3 slices for each person.
Cook the slices very quickly in a pan with butter and lots of garlic.
Eat the steak slices on buttered soft rolls - hamburger buns are good.
Honestly your kids will love this and it is cheaper than a big mac because you only put 2 or 3 thin slices on each bun.

Filet in a balsamic wine reduction!!! Melts in your mouth!!!
Make sure that you take your filets out of the fridge about 30 minutes before you cook them.
In a large skillet, turn the heat on high and sear for about 30 seconds. Use tongs to turn it over and sear other side for 30 seconds as well. Turn the heat down to med-high and pour in 1/4 cup dry red wine and 1/4 cup balsamic vinaigerette. Cover the skillet and cook 3-5 minutes on each side depending on size of filet.
Filet is my absolute favorite... and I've had it prepared many different ways - this is the best all around method in my opinion.

Coat in coarse ground black pepper both sides, rub with olive oil, cover tightly with plastic wrap. Leave at room temp 1 hour.
Place baking sheet in oven, middle rack, 450.
After the initial hour, heat cast iron skillet with a few Tbs. olive oil. Get this very hot without scorching. Lay filets in hot pan without moving them for 4 minutes. Flip with tongs and cook 2nd side 3 minutes more.
Transfer immediately to hot cookie sheet in hot oven. Bake at 450 for 5 or 6 minutes. Remove to filet's to wire rack, tent loosely with foil for 5 minutes.
These will be the BEST med.- rare fillet mignon you ever tasted!

Filet Mignon with Mushrooms
Servings: Makes 4 servings.
Ingredients:
3 tablespoons butter
2 tablespoons olive oil
12 ounces button mushrooms, thinly sliced
4 5-ounce filet mignon steaks (each about 3/4 inch thick)
Preparation:
Melt 2 tablespoons butter with 1 tablespoon oil in heavy large skillet over medium heat. Add mushrooms and sauté until tender, about 10 minutes.
Melt 1 tablespoon butter with 1 tablespoon oil in same skillet over medium-high heat. Sprinkle steaks with salt and pepper. Add to skillet and cook to desired doneness, about 3 minutes per side for medium-rare. Transfer steaks to plate.
Return steaks to skillet and cook until heated through, about 1 minute. Transfer to plates. Spoon mushrooms over and serve.

It depends on how you like your meat well or rare , This is really fast season put in oven (broil) for 4 mins on each sides for rare if u want them well 6-7 mins on each side . And A good toss salad as a side

bring steaks to room temp.
drizzle with olive oil and sprinkle with salt and pepper.
that's it.
cook the steaks in a black iron skillet if possible.
sear on high for about two minutes each side and if this isn't done to your liking put in the oven to finish to the doneness you prefer.
i like rare.
