Thinking about opening a concession in Florida just to attend special events. Which food is the most popular?

Why..... Its.........GRILLED CHICKEN ON A STICK.
A simple and common food favorite at many a fair.
Not exotic, nothing to write home about, but let's face it.... how many people actually go home, stick strips of boneless chicken breasts on a stick, season & marinade it, then grill it?
I'd bet, it is not done to often.
Yet on any boardwalk, such as Coney Island, Ocean City (many states), Virginia Beach, South Beach, and SoCal, many a local fast food dining establishment has a good ole "chicken on stick", usually between $3 and $5.
Maryland just had its state fair two weekends ago, and sure enough..."grilled chicken on a stick" was popular food item scarfed my many a hungry fair goers.
There are many food items I enjoy....but at the fair, its "grilled chicken on a stick" and some of the local sweet corn!
Aaaahhh...... what simple yet pleasant indulgences!

What a coincednce I'm going to be selling food at county fairs next summer..I have 3 5-day ones in my immediate area..I've already got a formal application with one. They are charging $500 a week for a space, with everything included.
I say hot dogs have a nice markup..and beer.

Depends on the weather. For football and basketball games it's freezing where I live, so I'd go for Hot Chocolate, chips, pretzel, nachos, or maybe a hot dog. for baseball (☺) I'd go for the any of that food but probably candy, ice cream/sno-cone/slushee/smoothie/etc. and minus the hot cocoa

I am from Dallas and it's all about the Corndogs here. Funnel cakes are popular too.
