Sometimes the piggies can be just picky. I have some that love bell peppers and some don't. Some like squash and some don't. However, I keep offering the different veggies to all of the piggies, even if they don't eat them. Sometimes, if they see another piggie eating something, they will decide to try it too.
Since your piggie doesn't have a mate to emulate, YOU can try to get him to try something new. While you lay in a reclining position (kind of slumped in a chair or propped up with pillows on the bed) put your piggie on your chest. Then offer him a piece of bell pepper (or whatever you want him to eat). If he refuses it, put it in your mouth and begin crunching loudly. Then offer him the next piece. Do this several times & see if this might help him along. If he's very young, he may not even recognize some veggies as food.
My piggies eat a wide variety of different veggies & occasional fruit treats. See this list for recommended veggies: http://www.guinealynx.info/diet_vegs.html
Don't give up!

I have 2 guinea pigs and I have had them for 1 year now and they still run into there igloo sometimes, but they have gotten better because I take them out and play with them all the time and guinea pigs are very timid little creatures and a lot of the time just want to be left alone except one you get them out then they lighten up. It also depends on your guinea pig if they are very snuggly or not. I would suggest only doing fun stuff with your guinea for a while.

Well, my guineas like veges the most. I think it depends on the guinea pig. What it likes and what it doesn't. To tell you the truth I think I even gave my guineas a olive. Try and experiment with foods it shouldn't do anything to them. (imagine what the guinea pigs are eating in the wild) But to make sure nothing would hurt them maybe try looking it up. Oh and here's the list of what my guineas eat: Celery,Carrots,Lettuce,Oranges,Apples, and other stuff like that! Hope this helps

Please ignore the answer from "I love my garden".
But ღρυηквαвιι07ღ has an excellent post.
"I love my garden" is obviously not informed on how to properly house or feed a guinea pig.
Green bell peppers can be the best thing in your guinea pig's diet. That is where they can get most of their vitamin C.
Lettuce and leafy greens are also a very important part of their diet, mine get green leaf, Romain(cos), red leaf and a bit of kale.
Stay away from oats. 'Nuff said.
Please do not keep your guinea pig outside, they catch cold below 55 F and any change in temperature around 10 degrees can be fatal, inside is extremely ideal.
Here is a great list of veggies and their contents and how much to feed:

Note: I did not make these charts. They belong to the poster.

I suggest butter/bib lettuce, you can also give him a bit of romaine or radicchio(radicchio is the red lettuce. NOT red cabbage). Carrot slices are always a favorite with my two peegs, as are the occasional apple slices and cucumbers. If you can't get him to eat at all, try syringe feeding him baby-food carrots and get him to a piggie-savvy vet immediately.

i would not feed your guinea pig spinach or apples regularly, spinach can cause unusually high cholesterol and potassium, and the acids in apples can cause abscess in there mouth. they can be fed as treats though! Radishes can cause diarrhea and so can bell pepper. Parsley and Basil always seem to be favorites with my 5 month old, Lily. i tried oranges, but she doesn't seem to like those to much. if you can't get fresh veggies to your piggy every day, i would also suggest a vitamin enriched food such as Forti- Diet, which you can find at your local pet store. If your vet really wants you to get the veggies your piggy doesn't like in him, there is a little trick. you mix a little peanut butter with water(so you guinea pig doesn't choke on the sticky peanut butter) and dip the veggies in it and your guinea pig usally inhales it! You sound like a great piggy owner!

My 5 guinea pigs are all different. One is allergic to green apples, one hates cherries, the other loves em.... you should just take your guinea pigs in an enclosed area and set in front of it all kinds of foods. Now, your guinea pig should sniff some and decide if he likes it.... It worked with my guinea pigs

We had to offer our little guy bell pepper several times before he decided to try it. Same with parsley. Now he loves both of them as well as cilantro, dandelion, carrots & string beans.
I bought some guinea pig 'treats' that have Vitamin C, but he absolutely won't eat them. Even if I put one in with his dry food he just eats around it. Our kitten & rats all like them so we're gradually using up the bag.

lettuce isn't a good veggie neither is a bell pepper.
We used to feed out piggies all veggie kitchen scraps except of the onion or citrus family.
They also love oats - porridge kind mixed up with a little water
We used to keep ours in a rabbit hutch on the backyard grass and the hutch was moved to a fresh section of grass daily.
They were always covered with an old piece of carpet for protection against the weather.
