we eat a lot of breads, pancakes, waffles,etc in this house and i always use the healthy heart bisquick. its enriched white flour though and i would like to move more towards whole grain. i am not a big fan of baking or cooking and would want a mix like bisquick that is already ready to baking. I dont want something with 15 ingredients! anything out there? all this flax and wheat germ stuff i highly doubt my kids would eat. thanks!

In the book "Diet for a Small Planet" they have a Quick Mix recipe that is very similar to bisquick. My wife and I have been using it for quite a while with good results.

Basic Quick Mix

Combine and mix thoroughly:
6 1/2 cups of whole wheat or whole wheat pastry flour
1 1/2 cups of soy flour
1 tbsp. salt (or to taste)
1 cup of instant dry milk
1/3 cup baking powder
2 1/2 cups of wheat germ

Store in a tightly covered jar in the refrigerator ready to make
any of the following options or your own experiments.

PANCAKES

Combine:
1 egg, beaten *
1 cup milk, buttermilk or yogurt
3 tbsp. oil

Add to 1 1/2 cups Quick Mix

* To make lighter pancakes, use 2 eggs and fold in stiffly beaten egg
whites just before bakin. Also, you can add fresh blueberries or
bananas and nuts.

WAFFLES

Combine:
2 eggs, beaten *
1 1/2 cups milk
3 tbsp. oil or melted butter
2 tbsp. honey

Add to 1 1/4 cups of Quick Mix

* To make lighter waffles, beat egg whites until stiff and fold in
just before baking.

MUFFINS

Combine:
2 eggs, beaten
1 cup milk, buttermilk or yogurt
2 tbsp. oil
2 tbsp. honey or molasses

Add to 2 1/2 cups Quick Mix

Bake at 400 degrees for 15 minutes.

Add (optional):
* chopped dried fruit (dates, apricots, raisins, etc.)
* chopped nuts or fresh berries or canned, drained and chopped fruit.
* My wife also uses grated apple with 1 tsp of cinnamon and chopped nuts.
* Also 2 mashed bananas and chopped nuts.
* Grated carrots, 1 tsp. cinnamon, and chopped nuts.
It's unlimited on what you can do.

The whole wheat muffins make a good breakfast for those on the run.

Here is a good master mix for Bisquick. This one has a bit of oil instead of shortening so it is healthier. I also suggest getting King Aurthurs White whole wheat flour. It will give a lighter texture to your baking or pancakes and stuff than whole wheat flour and it has the same nutritional goodness as regular whole wheat flour. The kids won't even know it is whole wheat. :-) If you bake your own bread try adding some sesame seeds and sunflower seeds... they add more good nutrition and fiber and most kids love sunflower seeds and sesame seeds.

Bisquick Baking Master Mix

1 tablespoon baking powder
1 1/2 teaspoons sugar
1 1/8 cups flour
2 1/2 tablespoons canola oil

Sift together baking powder and sugar into flour. Sift together twice into large mixing bowl. Slowly add oil, cutting in with pastry blender (or 2 knives), until mix is consistency of corn meal.

Store in tightly covered container at room temperature or may be refrigerated. Use for pancakes, waffles, biscuits, coffee cake.

Buckwheat pancakes are wonderful. Some of our grocery stores around Cleveland, OH carry mixes. They taste totally different, but excellent. I've loved them since I was a kid, so hopefully you and your kids will also.
