** My tips are use good olive oil, fresh, tasty, sweet, good ingredients and chop everything small. I like the following recipe:
Israeli Salad:
2 large tomatoes, diced
2 cucumbers, diced
1 large onion, diced
4 tbsp. finely chopped parsley
Juice of 1/2 lemon
1/4 cup superb olive oil
Salt and black pepper to taste
Chopped fresh mint (optional)
1. Combine the tomatoes, cucumbers and onions in a bowl. Pour lemon juice over the vegetables. Add the remaining ingredients and toss well before serving.

ISRAELI SALAD
3-4 ripe tomatoes
2 lg. cucumbers
1 lg. green pepper
1/2 red pepper (optional)
1 onion
1/2 c. Italian salad dressing
Salt, pepper, garlic salt & oregano added to taste
Israeli salad is used as a side dish, garnish and as an addition to sliced meat in a Syrian pocket. There are no "greens" in this salad, the vegetables are simply chopped and mixed together. Add salad dressing and spices. Improved flavor comes from being made a few hours ahead of time and/or served at room temperature.
Serves 6-8.

ISRAELI VEGETABLE SALAD
2 fresh tomatoes
2 fresh green peppers
1 to 2 tbsp. olive oil
2 lg. cucumbers
1/2 sm. onion
1/2 tsp. pepper
Dice all vegetables into 1/2 inch cubes or smaller. Put them into a salad bowl. Add the oil and pepper. Let stand at room temperature at least 1/2 hour before serving. Serves approximately 4.

ISRAELI CARROT SALAD
1 1/4 c. orange juice
9 med. cubed carrots
2 1/4 c. chopped cabbage
3/4 c. raisins
4 1/2 tbsp. sesame seeds
3 sectioned oranges
Pour orange juice into an electric blender. Gradually add carrots and puree them. Transfer mixture to a bowl. Add cabbage, raisins and seeds. toss. Garnish with orange sections. Yields 6 servings.

When I was in Israel the most common salad was made with cucumber, tomato and green onion [scallion].
My friend would cut most of the green off the scallion, quarter the rest lengthwise almost to the end of the bulb and slice very thinly to get a very small dice.
Their cucumbers over there are smaller. I have substituted our regular cucumbers for english cucumbers, smaller cucumbers, but my favorite are the pickling cucumbers. Seed them and and dice them finely.
Seed your favorite tomatoes and dice finely.
There should be an even ratio of diced tomato to diced cucumber. Add the scallions to taste and season with salt and pepper.
The fancier the engagement the finer the dice.
