Chemically speaking: absolutely nothing. Strawberries already have sugars in them. Adding more sugars does nothing chemically to the sugars or the strawberries. It just makes them taste sweeter. Your question could also be put as "what happens chemically when you add more salt to the ocean" answered by "chemically, nothing." No reaction occurs.
