pH may varie for different types of micro organism to survive. So it should be known prior to preserve something that which type of micro organism are going to affect the perticular substance. And at what are the favourable condition for its growth in the medium. So accordingly you have to adjust the pH to prevent it from spoiling. It is also not true that in acidic medium bacteria or fungus can not survive. As because you will be knowing that Helicobactor pylori exist at pH = 3 (in stomach) which is favourable for it.

There is no straight answer for this question. As a rule, molds and yeast work in a wide range of pH, and thus, we must know exactly what we are dealing with. However, basic media are generally more suitable for the growth of molds and yeasts than acidic media.

At lower pH there is no chance of microbial action and can be preseved for a long time.pH<3
