how about monoskiing, barefoot waterskiing and wakeboarding. I understand that some need to be faster than others - i.e. the greater the area, the slower the speed, but how fast do you really need to go? Can I waterski at 20 knots?

It does depend on weight fo the skier and area of the ski(s) but
2 skis: 20 mph should do, barely. knots? I forget the relationship
Monoskiing: 25 mph

Barefoot: at least 35 mph. See

I saw this on Mythbusters and you can waterski behind a rowing boat crewed by a professional team eg Oxford boat crew, but only just.
