Do you have to ferment the dal overnight? If I don't ferment it, will it still come out good? How long is the minimum time to soak it?

ferment dal when you add it to rice that is ground up with water which is a paste. my mom puts it in the oven and she keeps it there overnight until air bubbles are visible and the mixture has risen. it tastes better when you do this, its not as dense and it's light and fluffy and just right.

Absolutely ferment it overnight after grinding and mixing all of the ingredients. It makes all the difference in the world.

You can soak it 5-6 hours and be fine. I haven't tried not fermenting it. I make the one at http://east-indian-recipes.blogspot.com and it tastes great!
