The writing most often used is more difficult to explain. There are 3 main types of writing systems in use in Japan.
Kanji - taken from the Chinese characters
Hiragana
Katakana

Most sentences use both Kanji and Hiragana as kanji is used mostly for nouns and Japanese names where hiragana is used for grammatical purposes (so the sentence makes sense) and where the kanji for a particular word is unknown or confusing.Kanji is what you see in alot of asian inspired tattoos and home furnishings,etc.

Katakana is mostly reserved for foreign words and names that don't have a kanji character as well as scientific words.

Although Japanese has different dialects, they're not as extreme as, say, Chinese. Most, if not all, Japanese generally speak the standard form of Japanese that is used on television and is based on the Tokyo area accent. Kyoto, Osaka, Kyushu, and the Northwest do pronounce things only slightly different and would mainly rely on local dialect for a few expressions. Older people may be different though. Okinawan, on the other hand, isn't a dialect, it's pretty much a different language.
