You can use 1/4 cup unsweetened applesauce per 1 egg.
You can also use 2 tbsp corn starch per 1 egg. If it is a bit dry, you can simply add a bit of water or oil until it is the consistency you want.
Honestly, I have found that most chocolate chip cookies do not even need eggs. I add water for consistency and end up with great cookies.
ps. 1 banana = 1 egg for cakes, but you can also use the corn starch

All sugar and egg substitiues are highly processed, many are toxic (like sweet and low) and are just *junk*.
For baking, 1 Tbsp whole yogurt can be subbed for 1 egg. Buttermilk works great too as an egg sub, 1Tbsp for 1 egg. If its for vegan recipies, I have actually made wonderful cakes without any eggs or egg subs!! You can use malt as a binder and a little bit extra baking soda will make a very light cake!
As for sugar, ALL sugar substitutes are highly toxic and should be avoided! Whole maple syrup, rapadura, honey(if you arnt vegan) and agave syrup can be used everywhere you would normally use sugar, most in the same amounts too. Dried stevia leaves are 300 times more sweet than sugar (go figure!!) and can be easily incorperated into cooking.

Depending on the recipe, you can use a number of things. For pancakes and waffels, I like to use bananas. For muffins and cookies, I use applesauce. In other recipes, you need to use Ener-G Egg Replace (check the Natural foods section in your grocery store).
As for sugar, I'm not too sure. Someone mentioned sweet and low, that might be an idea, or use Splenda.

About sugar...well...if you don't mind using chemicals in your food, Splenda for baking works ok, but the texture suffers. If you want to avoid processed sugar, raw sugar, brown rice syrup and agave nectar work quite well.

There's a product called Ener-G. It's a powdered egg replacer you can use in baking. You could substitute white sugar {white cane sugar is filtered using the charcoal of burned animal bones} with turbinado sugar (brown colored sugar with some molasses still in it).

egg substitue is best for eggs.
splenda, sweet & low, equal or good for sugar but be sure to check to see how much, it's on the box.
