Butter room temperature 1 cup
Sugar 1 1/4 cups
Orange zest only 1 T
Vanilla 1 t
Eggs room temperature 6 each

Flour 1 1/2 cup
Baking powder 1 t
Orange juice 1/4 cup

Orange marmalade 1 cup
Powdered sugar 1/3 cup

Basic Steps: Cream → Beat in Wet → Mix in Dry → Bake → Form
Preheat oven to 350°. Grease and flour three cake pans. Sift together flour and baking powder.
In a mixing bowl, beat butter and sugar together on medium-high speed until fluffy and light, about 3-5 minutes. Add orange zest and vanilla and beat in 15 seconds more.
With mixer at medium speed, add one egg at a time, letting each egg incorporate before adding the next.
Turn mixer to medium-low. Add flour in three parts, alternating with the orange juice until smooth. Don't overbeat.
Spoon equal parts of batter into the three cake pans. Bake for about 25 minutes. Remove cakes and cool completely.
Mix the marmalade with a little water and stir till almost pourable. Spread half the marmalade over one of the layers. Add the next layer on top and spread with the other half of the marmalade. Top with the last layer.
Sprinkle the cake with powdered sugar through a sieve and serve.
VARIATIONS
You may omit the orange zest and substitute milk for the orange juice if you like. Use any jam you wish. Raspberry is very good.


Salvadorian Quesadilla

2 cup flour
1 cup sugar
1 cup milk
2 bars margarine
3 eggs
1 tablespoon baking powder
6 tablespoon of Parmesan cheese
Put four, sugar, baking powder and parmesan cheese in bowl, then mix. Add the eggs in one by one. Add the margarine not melted. Add in the milk, mix well. Preheat oven to 350 degrees and cook for 40 minutes.

El Salvador Buñuelos

6 cups flour
1 tsp. sugar
1 tsp. baking powder
1 egg
2 TBSP. shortening
water
1/4 tsp. cinnamon
Frying oil

Mix well the flour, baking powder and sugar. Add the egg and shortening and mix until both are absorbed by the flour. Add water a little at a time until it becomes a dough consistency (like tortillas). Roll small balls of the dough (about 1/2 the size of your hand) into pancake-like shapes. Let them sit for awhile so they can dry a bit. This way they won't absorb too much oil when you fry them. Deep fry the buñuelos and sprinkle with cinnamon and sugar. They should be nice and crisp.

4 oz Parmesan Cheese (grated)
3 eggs
1 stick butter (small)
1 Teaspoon Baking Powder
Sesame Seeds
Mix butter and sugar until creamy. Add eggs one at the time. Sift flour and Baking powder. Add to sugar mixture little by little. Add sour cream, parmersan cheese mixing well. Grease spring pan or baking dish with butter. Add mixture evenly. Decorate with sesame seeds. Bake in a preheated oven at 350 degrees for 40 to 60 minutes.

This recipe is guaranteed to clog your arteries. You must have a cholesterol level below 150 to eat this cake.
