I know cats do the kneading when they prepare to sleep, etc. but my cat does this at the same time she's eating.

She is enjoying her food and is very relaxed. Don't change the brand of foods you are feeding her. This is a very pleasureable time for her, cats knead things when they are happy and comfortable. you have made a great choice in cat food for her. Good choice! Keep up the good job!

Cats knead when they are feeling relaxed and contented, if she likes her food, then it's natural for her to knead to express her contentment.

she misses her mommy she used to knead her mommy to her milk flowing its normal she was weaned a little early

It reminds her of her mother and nursing and it is comforting.
