Chicken Roll - Ups
1 can crescent rolls
2 c. cooked chicken, chopped
1 c. shredded cheddar cheese
1 can cream of celery soup
1 soup can of milk
** mix chicken and cheese. put half of this mixture aside in a bowl. mix soup and milk with the other half ot h chicken mixture. unroll crescents and put about 1 tablespoon of dry chicken mixture on each crescent and roll up. place in greased 9x13 pan. cover with liquid mixture. bake about 30 minutes at 350 degrees until crescents rise and are golden brown.
chicken spaghetti
20 oz cooked spaghetti
3 boiled chicken breasts
1 chopped onion
1 stick butter
1 can mushrooms
1 can cream of mushroom soup
1 can cream of chicken soup
1 can rotel
16 oz Velveeta cheese
** saute onion in stick of butter. tear/cut up chicken and put in with cooked spaghetti, sauted onions, mushrooms, cream of mushroom, cream of chicken, rotel, and velveeta. keep on low to medium heat until all is warm and velveeta is melted.
chicken in the oven
3lbs bonless, skinless chicken breast, cut into serving sizes
season salt
lemon pepper
flour
1 stick melted butter
crushed ritz crackers
** sprinkle chicken with season salt and lemon pepper. roll in lfour. roll in melted butter. roll in crushed ritz crackers, you can stretch those with crushed bbq chips. place in foil liked 9x13 pan. bake for 45-60 minutes at 375 degrees or until its done. too long and it gets dry.
Lemon pepper chicken
4 chicken breasts (halves)
3 lemons
1 orange or yellow bell pepper
1 red bell pepper
1 medium onion
1 c. white cooking wine or sherry
**de-bone chicken and slice up into 3 pieces per breast. put in baking dish and salt. slice peppers and onion. place on top. pour wine on chicken and peppers. squeese juice from 2 lemons on peppers and chicken. slice last lemon and place on top. cover with foil. bake at 350 degrees for 45 minutes or until done.

There is a first step in which you have choice. But this first step is really crucial!
You can either Brine or salt pack the Chicken first.
Brine:
Soak the raw cleaned chicken in a VERY salty solution of water or broth. Soak for 4-6 hours. If you put ice in the bucket, you don't have to refrigerate. Rinse and dry bird before roasting.
Salt Pack:
Wash chicken and lightly pat dry. Completely cover the chicken with kosher salt. The chicken will be packed in the mound of salt for 1-3 hours. Wash salt away, rinse chicken well and dry before roasting.
Roast the chicken how you normally would...it will be juicy and very flavorful! YUMMY!

I love this..it is my mother's recipe. it is very easy to make and taste really good!
Lemon Chicken
First you will need Chicken (I prefer 8 Breast).
Next you will need 8-10 lemons.
Then you will need 1 cup of butter melted.
Add everything together in a slow cooker or in an oven at 400. You will cook this for about 3 hours or until tender. This is not the healthiest dish but it is very tastey. Good luck and enjoy!

This is easy and wonderful.
1 or 2 raw eggs with some milk, salt and pepper as you like, mix well.
Dip the chicken in the mixture and then dredge in italian breadcrumbs and/or flour.
Cook at 350 for 1 hour turning on the 1/2 hour.
Juicy and tender. Great with pasta.

This is the best, no joke!
Bacon-Wrapped Chicken Breasts
4 boneless, skinless chicken breast halves
1 (3-ounce) package cream cheese, softened
4 teaspoons minced green onion
1 teaspoon dried tarragon leaves
1 teaspoon black pepper
8 slices smoked bacon
Split each breast horizontally, making a pocket and leaving one edge intact. Set aside.
Combine cream cheese, green onion, tarragon, and black pepper. Spoon 1/4 cheese mixture into the pocket of each breast. Wrap each with 2 slices bacon and secure with wooden picks.
Cook over medium heat on the grill or under the broiler, about 10 minutes per side, or until bacon is crisp and chicken tests done.
Serves 4.

Marinate boneless chicken breast in creamy Italian salad dressing for 20-30 minutes then grill. I put the chicken in a zip lock bag and just cover with the dressing. Do not use the leftover dressing thats in the bag for a dipping sauce. They are SO good.
