Try something 'new and different' with it ... and there are all kinds of 'quick cooking' things that you can buy at the store, from 'plain rice' to fancy potatoes. My husband is a 'chef' and we have 'roasted pork tenderloin' quite often, and what we eat with it CHANGES every time. If you want a 'fancy' supper, then do 'herbed roasted red potatoes' and serve it with an 'extra good' salad that has baby greens, peppers, mushrooms, cheese (any kind, and you can even use two kinds if you want) ... with a 'good' dressing. If you want to just have it for a 'regular dinner' then I'd say have some nice 'creamy sauce' with pasta and a good 'vegetable mix' ... we like a 'mix' that has snow peas, mushrooms, green beans, carrots, and 'baby corn' ... just be sure that you have: 1 a 'good protein' (your 'roast'), 2, a 'good starch (like potatoes, rice, or pasta), and 3, a 'good vegetable' (one you like) ... and you don't have to do anything FANCY with any of that and you can still have a nice FANCY dinner by serving it on 'good china' ...

Mmm...do this one. It is an apple casserole of sorts. Everyone knows apples go famously with pork.

Core, peel, and slice about 4 or 5 apples. Preheat a skillet with about 4 tbsp. of butter...when the pan is nice and hot throw in your apples and saute until nice and golden. While you are cooking your apples you can fry up some bacon. I would say 1 or 2 slices per apple. Let cool and then crumble into small pieces. Layer your apples with crumbled bacon and cheddar cheese in a casserole and run it in the oven just long enough for the cheese to melt.

I often do the above adding sauteed onions to the mix. Makes for a nicer flavor. Good luck!

Sweet Potato Cakes


Ingredients
2 sweet potatoes, medium size, peeled and grated
1onion, medium, grated
1large egg
1 tsp. of parsley, chopped
A pinch of ground nutmeg
1/ cup of breadcrumbs
1 tsp. of scallion, minced
1/2 tsp. of salt
2 to 3 twists of fresh ground black pepper
Vegetable oil for frying as needed

Makes 4 to 6 Servings

Method


Combine grated sweet potato and onion. Place in strainer or colander and drain well. Transfer sweet potato and onion to a mixing bowl. Add egg, parsley, nutmeg, breadcrumbs, salt and pepper. Mix well. Heat oil in a fry pan over medium low heat. Form "cakes" with sweet potato mixture and carefully add to hot oil. Cook for 4 to 5 minutes on each side until golden brown. Remove and drain on paper towels. Serve as an accompaniment for roast pork.


Slow-Baked Tennessee Tomatoes recipe

6 large ripe tomatoes, cut in half horizontally
6 teaspoons olive oil
Salt and freshly ground pepper
3 garlic cloves, minced
1/3 cup crumbled goat cheese
3 tablespoons chopped basil

Preheat oven to 325 degrees F.

Place tomatoes on baking sheet, cut sides up. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 2 to 3 hours or until the tomatoes collapse and begin to caramelize. Sprinkle with garlic about halfway through baking, and sprinkle with goat cheese during last 5 minutes. Sprinkle with basil just before serving.

Onion Soufflé recipe
3 (8 ounce) packages cream cheese
1/2 cup mayonnaise
2 cups shredded Parmesan cheese
2 packs frozen chopped onions, thawed and drained

Combine ingredients. Put into round glass baking dish. Bake at 425 degrees F for 30 minutes, or until browned.

Serves 6-8.

Bacon wrapped asparagus bundles w/ olive oil and sea salt. 6-8 pcs asp. tie a piece of raw bacon around. Then drizzle w/ olive oil and sprinkle with sea salt. Bake in the oven @ 325 until bacon is done. Serve right away or asp. will shrivel.

I like cous cous - Near East is a great brand; they also have rice pilaf. I like plain cous cous and flavor it with a bit of butter or olive oil, and some seasoning, such as Mrs. Dash Table Blend.

Glazed carrots, green bean casserole, mashed potatoes, or a veg. medley..such as carrots, cauliflower and broccoli. One other I like to make is broccoli and cheese. The family LOVES it all! Good Luck hon!

If I'm cooking that I usually serve it with mashed potatoes and green beans, a nice white wine gravy compliments it well too. Enjoy!!
