if there are no flights from hk airport you could go to shenzhen airport. some hk travel agencies sell tickets and include transport from various places in hk to the airport. and its a lot cheaper than flying from hk

Surely you could find a flight after 6.30pm. Or you could take a cruise to Xiamen. Every other day there is a ferry (MV Wasa Queen) from Hong Kong to Xiamen.
