I found this one online but I don't know if this is traditionally served at a Chinese wedding:
Lobster And Orange Salad Recipe
1/4 tsp salt
1 cup coarsely chopped cooked lobster (or scallops or shrimp)
3 large oranges, peeled and sectioned
1/2 cup whipping cream, whipped
1/4 tsp grated orange rind
1/4 cup orange juice
2 tbs mayonnaise
1/2 tsp prepared horseradish
Lettuce leaves
Ground nutmeg
Sprinkle salt over lobster; add orange sections and toss gently. Chill one hour. Combine next 5 ingredients; mix well. Chill one hour. Spoon lobster mixture on lettuce leaves. Top with whipped cream dressing; sprinkle with nutmeg. Serves 4
Chinese Shrimp (or Lobster) Wedding Salad
INGREDIENTS
1 (11 ounce) can lychee fruit, drained with juice reserved
1 pound cooked shrimp - peeled and deveined
3 Fuji apples - peeled, cored and cubed
1 tablespoon lemon juice
1/4 cup mayonnaise
DIRECTIONS
In a large bowl, combine lychees, shrimp and apples. Stir in lemon juice and 1/4 cup reserved lychee juice. Let chill for 15 minutes.
Remove from refrigerator and drain liquid. Combine drained liquid with mayonnaise and toss together with fruit. Chill for at least another hour and serve cold.

Seafood Fruit Salad
5 lrg prawns, shells intact
6 oz cooked lobster chunks
250 gm just ripe papaya, cut with a melon ball scraper
200 gm ripe mango, cube
Water chestnuts, cube
Salad dressing
2 tbl Thailand chilli lime sauce
1 tbl fish sauce
2 tbl lime juice
1/2 tsp sugar
1 tbl sesame oil
2 tbl chopped coriander leaves
Some salad/lettuce leaves, tear into big pieces
COMBINE salad dressing ingredients in a mixing bowl. Set aside.
Steam the prawns till cooked.
