If you are not able to keep a check on it and whisk it now and then ,you can make a cartouche' (please excuse my spelling) basicly greaseproof paper with butter rubbed on to it placed on top of your custard. Alternativly you can use old butter wrappers if you have them . hope this helps .Rod

Make the custard a tiny bit thicker than you want it, and then pour milk on the top of it, just enough to cover the surface. When you want it, whisk in the milk - voila, velvety smooth custard with no lumps of skin!

Definitely sprinkle on sugar - you can adjust the amount you put in the mix to allow for this. Putting cling film on allows condensation to drip on custard - might stop skin but you will get water droplets in the custard. If cling film touches custard - you have to pull it off - lose custard that way and way too messy!

Don't stop the skin, it's the best part. If you must prevent it then keep agitating (stirring) the custard until it's cool. You can accellerate cooling by immersing your custard pan in a bowl of cold water whilst doing this.

Put cling film over it to act as a skin, it works every time for me. Make sure that no air can get to the custard or it won't work

when you a finish making the custard you should use some clear wrap to cover to top, ensuring that it touches the surfuce of the custard. and peel off before using.
