Chocolate Ripple Cake!! So easy.
1 packet of plain chocolate cookies.NOT chocolate covered, but like oreo-type cookies without the filling. I'm from Australia, so I have no idea what the equivalent is over there.
I tub of cream
Chocolate chips, sprinkles, or whatever you like to decorate
Whip the cream and use it like a paste to 'glue' your cookies together.Make sure you have a reasonable amount between each cookie. Keep following this process using the whole packet, forming a long tube shape.Once all the cookies are used, use the rest of your cream to cover the tube, then decorate with your choice of decoration.
Its best if you make it the day before, that way the cream has a chance to soak the cookies a little, giving it a softer, cake-like texture. So good, and SO easy!!
Enjoy!

This recipe is so easy, and is always a huge hit every time I serve it. Start with a large rectangular baking pan, line the bottom of the pan with honey graham crackers (Nabisco or Keebler are best). Prepare one large box of instant chocolate pudding. Top the graham crackers with the pudding. Add another layer of graham crackers (if the graham crackers don't fit the pan, break and add in smaller pieces until all is covered) Then top the entire dessert with one large tub of coolwhip. Sprinkle broken or grated chocolate on the top. I have used hershey chocolate bar, or even reeses peanut butter cups. Refridgerate until serving (at least a half hour). Enjoy! The graham cracker softens and this dessert tastes like a chocolate cream pie. Yummy!

Parfaits are easy. instant chocolate and vanilla puddings and whipped cream. Get some really cool looking glasses, make up your puddings. Place a blob of chocolate pudding in the bottom, and then a blob of whipped cream, then a blob of vanilla pudding, more whipped cream and so on depending how deep the glasses are and top off with whipped cream and a cherry. Do the same with jello. Do the same with ice cream and crushed cookies, layered the same way. Easy and quick and every time I've done it I always get good reviews and have to tell them how I slaved all day long........lol the chocolate moose thing is good but takes way to much time and it taste good but most people know how fatting it is.

Just do mini fresh fruit tarts. They look fantastic and taste awesome too. Go to the nicer grocery store and look for mini tart shells in the freezer section. Also get: Berries of your choice (raspberries, strawberries, blueberries, etc.)
2 packages of cream cheese
Granulated sugar
vanilla extract
apricot preserves
Bake your tart shells according to the directions on the package. Set your cream cheese out to get it nice and soft (no more than an hour though.) Take the tart shells out of the oven and let them cool. Meanwhile, mix together your softened cream cheese with 1 cup granulated sugar and one teaspoon of vanilla extract. Get the mixture nice and smooth and refrigerate until your tart shells are completely cool. Meanwhile wash your berries. When the shells are cool, dollop the filling into them and top with your berries. Then take some of the apricot preserves and put it into a small sauce pan with just a touch of water. Heat on the stove top until runny. Let it cool for a minute or two and then use a pastry brush to put it onto the berries. This gives a nice shine and great flavor too. Good luck!!

Here is a fantastic cake that has always been well received by everyone. It is also very easy, as it begins with a box cake. Good luck!
Golden Rum Cake
The butter rum glaze makes it special. An easy way to glaze your cake is to pour half of the glaze into Bundt pan, reinsert cake, then pour the rest of glaze over the bottom of the cake. Let absorb well then invert back onto platter.
1 cup chopped walnuts or pecans
1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant vanilla pudding mix
4 eggs
1/2 cup water
1/2 cup vegetable oil
1/2 cup dark rum
1/2 cup butter
1/4 cup water
1 cup white sugar
1/2 cup dark rum (such as Goslings Black Seal)
1 Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. Sprinkle chopped nuts evenly over the bottom of the pan.
2 In a large bowl, combine cake mix and pudding mix. Mix in the eggs, 1/2 cup water, oil and 1/2 cup rum. Blend well. Pour batter over chopped nuts in the pan.
3 Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the cake comes out clean. Let sit for 10 minutes in the pan, then turn out onto serving plate.
4 Brush glaze over top and sides. Allow cake to absorb glaze and repeat until all glaze is used.
5 To make the glaze: in a saucepan, combine butter, 1/4 cup water and 1 cup sugar. Bring to a boil over medium heat and continue to boil for 5 minutes, stirring constantly. Remove from heat and stir in 1/2 cup rum.
Servings: 12
Preparation time: 30 minutes
Cooking time: 1 hour
Ready in: 1 hour and 30 minutes
