Because light travels in a straight line and the geometry of the reflections. The light leaves your right eye, hits the mirror and comes back to you in a straight line. The light from your right eye becomes the left eye of the reflection. At the same time that light could not travel to the bottom of the mirror and reflect back up to your eye. Any light that goes from you eyes and reflects when it hits the low part of the mirror continues in a downward direction.
