Hot-Hot Chocolate with Baileys

Cold-Malibu Rum, Pineapple juice and a splash of Grenadine (we call it a Panty Dropper)

Happy Holidays!

I have 2 favorite "winter" cocktails. One is simple, but always a hit. It's called a "Peppermint Patty", you mix a full shot of peppermint schnapps with 6 oz of hot chocolate. Top with whipped cream and stick a candy cane in the mug to stir! Very good on a cold night. The second is a bit more complicated, its called a "Spanish Coffee". It has 3 liquors, Cointreau (or triple sec, an orange flavored liquor), brandy, and Kahlua (or Tia Maria). First you wet the rim of a tulip glass or a tall, glass, coffee mug, and dip it in cinnamon sugar. Next you pour 1/2 oz of the Cointreau, 1/2 oz brandy and 1 oz Kahlua. Top off with coffee, whipped cream and sprinkle a little more cinnamon sugar on top. Very good and all you need is 1 to get warm and toasty!!

Put a dollop of chocolate sauce (preferable dark choc) in the bottom of a large wine glass and swirl it up the sides with a straw.
Mix 18.75ml Baileys, 18.75ml Kahlua and 12.5ml Vodka (try vanilla vodka for a twist) with 75ml milk and 75 double cream. Mix it all in a blender with crushed ice and pur into the glass. Sprinkle some choclate shavings on top.

Very festive

I like Sex On The Beach - 1 part Vodka, 1 part Peach Schnapps, 2 parts orange juice and 2 parts cranberry juice. Serve with lots of ice. There are so many different variations of this but this is my favourite.

Nothing beats a good dark Rum (First choice Flor de Cana 25 YO, second choice Bacardi Select) and Jupina or any other pinapple soda.

Cosmopolitan because of its color -- so festive.
"The cure" -- a preventative of course after being in the cold.
1/3 fresh lemon juice, 1/3 honey, 1/3 rum heated and served in a tall slim glass cup with a nice twist of Meyer lemon peel.

I like white chocolate martinis. Put crushed oreo cookies on the rim and drip chocolate syrup down the inside of the glass. In a mixer do half of Vanilla Vodka and half of Baileys or Godiva white chocolate liquor. Dont be afraid to mix it up a little too. It'll just be one drink down the drain or if you're hard core, down your neck even if its nasty! ; )
