I am not a bad cook, although, lately I feel like I have been making the same things over and over. I think I need new ideas. I am a mother of 3 and have a fulltime job, so I would like stuff that is quick and easy. Can anyone out there help me?

Chicken 'n' Biscuits
1 lrg can chicken
2 cup cheddar cheese, shredded
1/2 cup sour cream
1/4 cup milk
1 can cream of chicken soup
1 tube biscuits

mix everything except the biscuits together in a 9x13 baking pan and then place the biscuits on top and bake according to the directions on the tube of biscuits.

BAKED RAVIOLI
1 pound ground beef
1/2 (25 ounce) package frozen cheese ravioli
1 (14 ounce) jar spaghetti sauce
1 (14.5 ounce) can diced tomatoes, drained
1 cup shredded mozzarella cheese
1 cup shredded Monterey Jack cheese
1 tablespoon grated Parmesan cheese

Preheat the oven to 450 degrees F (230 degrees C). Crumble the ground beef into a large skillet over medium-high heat. Cook and stir until no longer pink. Drain grease, then stir in the spaghetti sauce and tomatoes. Spread 1/3 of the sauce in the bottom of an 11x7 inch baking dish. Arrange 1/2 of the ravioli over the sauce. Sprinkle 1/2 of the mozzarella cheese and 1/2 of the Monterey Jack cheese over the ravioli. Repeat layers, ending with the last of the sauce on top. Cover with aluminum foil. Bake for 30 minutes in the preheated oven. Sprinkle Parmesan cheese over the top before serving.


TATER TOTS AND BEEF
1 lb. ground beef
1 sm. onion (diced)
1 can cream of mushroom soup
Tater tots

Brown ground beef and add onion. Cook until onion is clear. Put in bottom of 1 quart casserole. Cover with mushroom soup. Top with tater tots. Bake 350 degrees until tater tots are brown.


RIGATONI AND HAM BAKE
3 c. rigatoni
2 c. diced cooked ham
1 c. shredded Cheddar cheese
1 jar 4 cheese alfredo sauce
1/2 cup milk
1/2 c. crushed ritz crackers
butter

Heat oven to 350 degrees. Boil water (2 quart) in a large deep pot with 2 teaspoons salt and 1 tablespoon oil (to prevent boiling over). Add rigatoni noodles, stir to separate. Cook uncovered until water comes to a full rolling boil for 10-11 minutes, stir occasionally. Drain and rinse under hot water. In a large bowl, combine cooked rigatoni, ham and 1 cup cheese. In a medium saucepan, mix milk with alfredo sauce. Combine sauce with rigatoni mixture. Turn into 2 quart casserole. Sprinkle with ritz crackers and dot with butter. Bake at 350 degrees for 25-30 minutes.


CHICKEN PARMESAN
4-6 chicken breasts
3 eggs plus 1 tablespoon water, beaten
1 1/2 cups breadcrumbs plus 1/3 cup grated parmesan cheese
1 jar favorite spaghetti or maranara sauce
Sliced Mozarella cheese

Place each breast between two pieces of saran wrap and pound thin using a meat hammer, rolling pin or a heavy can. Heat two tablespoons of oil in a skillet. Dip breast in the mixture of breadcrumbs and parmesan, into the egg wash and into the breadcrumbs again. Place in skillet and brown on each side, 2 to three minutes. Place in baking dish and cover with maranara sauce. Bake at 350 degrees for 30-45 minutes until chicken is cooked through. Place mozarella slices over breasts. Place under broiler 5-7 minutes until cheese is melted and bubbly and lightly browned.


EASY BEEF ENCHILADAS
1 Lb. ground beef
1 (19-oz.) or 2 (10-oz.) cans Old El Paso Enchilada Sauce
6 oz. (1 1/2 cups) shredded cheese
1 (12-ct.) pkg. Ole El Paso Flour Tortillas for Soft Tacos &
Fajitas

Heat oven to 375*F. Brown ground beef over medium-high heat
until thoroughly cooked; drain. Stir in 3/4 cup Enchilada sauce
and 1 cup cheese. Spoon enchilada filling onto tortillas;
roll-up and place seam-side down in lightly greased 13 x 9 x
2-inch baking dish. Pour remaining enchilada sauce over top;
sprinkle with remaining 1/2 cup cheese. Bake at 375*F for 15 to
20 minutes. Makes 12 Enchiladas


HOT DOG AND HAMBURGER PIE
1 pound lean ground beef
4 hot dogs , cut into 1/4-inch slices
1 (15 ounce) can baked beans
1/2 cup ketchup
2 tablespoons brown sugar
2 tablespoons prepared yellow mustard
2 ounces Cheddar cheese, cubed
1 (1.25 ounce) package taco seasoning mix
4 slices processed American cheese
1 (9 inch) deep dish pie shell

Preheat oven to 400 degrees F (200 degrees C). Bake empty pie shell for 10 minutes. In a large skillet over medium heat, cook ground beef until browned, stirring occasionally to crumble; drain fat. Stir in hot dogs, beans, ketchup, mustard, taco seasoning, and cheese cubes. Cook for 2 to 3 minutes. Spread beef mixture into baked pie shell. Cut American cheese slices into strips, and make a lattice on top of pie. Bake for 5 to 10 minute, or until cheese is slightly melted.

BAKED BEAN CASSEROLE
1 lb. hamburger
8 strips bacon
10-12 hot dogs
Busch's baked beans (large can)
1 sm. Jar relish
2 squeezes of ketchup
½ bottle barbecue sauce
2 squeezes of mustard
Garlic powder
Seasoned salt
Parsley
Garlic pepper

In bottom of pan put ketchup, mustard, relish,
barbecue sauce and spices. Place beans in pan. Slice hot dogs thinly and quickly pre-cook in frying pan. Cook hamburger, drain both and place in pan with beans. Cook bacon, break and put in pan. Mix all ingredients together (I use my hands). Since all ingredients are cooked, just heat to taste at 350º for 40-60 minutes.


Sweet and Sour Chicken
1 medium onion, sliced
1 medium carrot, peeled, sliced
1 medium celery stalk, sliced
1 lb. boneless skinless chicken thighs, cut into bite-size pieces
1/2 cup KRAFT CATALINA Dressing
1/2 cup soy sauce
1/2 cup firmly packed brown sugar
1 tsp. grated gingerroot
1 can (8 oz.) pineapple chunks, drained, juice reserved
1 medium green pepper, sliced
1 medium red pepper, sliced
4-1/2 cups hot cooked MINUTE White Rice

PLACE onions, carrots and celery in slow cooker; top with chicken. ADD dressing, soy sauce, brown sugar, gingerroot and pineapple juice. Cover with lid. COOK on LOW for 7 to 8 hours (or on HIGH for 3-1/2 to 4 hours), adding pineapple and peppers for the last 30 min. of the cooking time. Serve over rice.


Over-Rice Dish
2 lbs lean ground beef. I use ground sirloin
1 Lg. can tomato sauce or 1 can stewed tomatoes
1 can water
1 TBS prepared mustard
1 TBS Worcestershire
1/2 medium size onion chopped
1 small green, red, or yellow pepper, chopped
salt and pepper to taste

Brown meat in heavy skillet. Add remaining ingredients and pour over meat in skillet. Bring to a boil and then simmer for about 1 to 11/2 hrs. until sauce is thick. Serve with rice or egg noodles. Serves about 6. It is very good so you may want to make more. Leftovers are great.

On days when i don't have much time, i throw some chicken tenders into a baggie with some italian dressing for a 1/2-3 hours, depending on how much time i have. After the chicken has rested in the ltalian dressing, i grill the strips in a grill pan on the stove, not on an actual grill. After the chicken has turned white, and is still cooking, i pour a little more italian dressing on top of the strips to carmelize. It turns into a wonderful protein portion of the meal. I also make either sweet potato fries, or thinly slice sweet potatoes and pan cook them on the stove in a small amount of butter. They turn out perfectly cooked and carmelized. I also serve the meal with a light salad with mixed greens,cranberries, apples and walnuts, with a honey mustard dressing. For the carb portion of the meal, i heat up a store bough bagguette and serve with butter. This all comes together in less than 30 minutes, as the salad can be assembled in a matter of 5 minutes, as well as the bread heated while the rest of the food is cooking. I have picky eaters in my house and they all love this meal.

Your slow cooker should be your best friend. You can throw everything in there the night before and it will be done when you get home from work. Eat, wash the cooker, repeat process. Put whatever you want in there, add onions and broth and let it go. It will be wonderful. Just don't add any dairy products until the last minute.

If your kids will eat veggies, I recommend taco salad. Make a big salad, top with crumbled tortilla or corn chips, taco meat, kidney beans, shredded cheddar and salsa ranch dressing. (I just mix ranch dressing with my favorite salsa. Viola! Salsa Ranch Dressing.)

Any kind of fish filet cooks very quickly. Just vary your marinades and glazes. You can marinate fish in about 15 minutes. I like salmon glazed with maple syrup and then baked. I start a big pot of rice before I start cooking the salmon. Dinner is ready in about 25 minutes, most of that time waiting for the rice.

I also do 'gourmet' cheese sandwiches. I take an onion roll, cut it in half, butter the inside and sprinkle with garlic powder. Put a couple different kinds of shredded cheese on the buttered roll (I like the combo of Swiss and Cheddar) and replace the top. Wrap the whole thing in foil and toss in the oven at 350 for about 20 minutes or so. Very good with tomato soup for the kids and a bloody mary for mom! Not only that, there's almost no cleanup.

There's tons more, but it's late and I can't think of them right now. After working two jobs for many years, I am the queen of quick and easy! Thank goodness I can take my time now.

I would say homemade pizza. It could be a family thing. Pre-cut your favorite toppings such as onions, peppers, mushrooms, and Italian sausage links. This will save you time. Pepperoni and Canadian Bacon come pre-packaged. I prefer homemade dough, but store bought is fine. I just use a role recipe for the pizza dough. You can make the dough the night before and let it rise while you are at work.
Suggested Toppings:
Pepperoni
Sausage
Canadian Bacon or Ham
Onion, Mushroom, Bell peppers, Olives, Cheese
Pizza Sauce or Tomato Sauce
Store bought dough
Suggestion: roll dough out and spray the pan with oil cook crust until half done. Remove and start adding sauce, cheese, Etc....
It's really good.

veal milanese with mashed potatoes!

This dish is so simple, it doesn't really need a recipe. But it
seems many people don't know about it - so here it is. It makes
for great sandwiches.

-beef (thin cuts, in the US I use sandwich steaks)
-eggs
-bread crumbs (plain or Italian style)
-salt, garlic powder, chopped parsley, lemon juice
-olive oil

Tenderize the steaks by pounding them with a meat mallet.
Children and men seem to enjoy doing this, so you may want
to enlist their help. Lightly beat the egg(s) with a fork and add
salt, garlic powder and chopped parsley. Mix. Pass the meat
through the egg mixture, and then through the bread crumbs.
Coat well.

Fry in olive oil until done, usually a couple of minutes on
each side. You can also bake the milanesas on the oven for
a less fatty alternative. If you fry them, make sure to use a
few paper towels to drain the oil.

You can serve the milanesas plain (traditionally, they go very
well with fried or mashed potatoes) or in a sandwich. They are very good
cold, and all that pounding makes them very tender. You can
also try them with melted cheese, ham and a friend egg on top

Kiev is a historical city wherever previous meets new and east matches west. One of the points you can see in Kiev is the St. Cyrill's Monastery. That monastery was fully off-the-beaten track. That small church is really as old as time, dating back once again to 12th century. Paintings of the popular Mikhail Vrubel take you right into a different world. And the fact the Monastery is from the key tourist web sites in Kyiv is likely to make the ability a lot more humbling and inspirational.

first of all....I'm a full time mother of 3 and a part time mother of 6, (step kids) and I too work a full time job..and although that chicken kiev sounds delicious...it does not sound easy...
I am however going to use that for a weekend meal...lol

Chicken enchiladas!!!
On the weekends, I cook hamburger, and chicken, and put them in tupperwear dishes for my week day meals...(a tip there)

For my chicken enchiladas...I cook on the stove Cream of chicken soup..cream of mushroom soup, canned green chilies..and several handfuls of shredded chedder cheese.
I cook it down to a nice sauce.

In tortillias I wrap chicken cheese, and a spoonfull of the sauce, and line them up in a casserole dish. I pour the sauce over the whole batch of enchiladas...and top with more cheese..Bake them until everything is gooey and melted and bubbly, and serve to a happy family!!!

(sorry about the lack of measurements...but you're a mom too...who has time to dig out the measuring tools?) lol

I make a killer grilled cheese sandwich special....Make the grilled cheese like usual, but first saute some veggies (onions, green peppers, mushrooms and diced tomatoes). When the sandwich cools a little, open it up and put a big spoonful of the cooked veggies in the sandwich. OMG, it's so good. I usually serve this with french fries (fried, not from the oven) and a salad.

Jambalaya, (Jambalaya rice, and sausage) is always a favorite for me. Also a favorite for children is Sloppy Joes, (Hamburger and Manwich). Also Goulash, goulash is always fun you can put whatever you desire in really, (hamburger, macaroni noodles, cheese, you can also put chopped green peppers, or sausage,r onions, Anything you like really). Chicken patties, and macaroni. I know its hard having children especially 3, all of which can be picky, and have different taste. Good Luck! Hope these weren't all meals you already make all the time!

Chicken Salad

2 chicken breasts
1½ cups unsweetened apple juice

Simmer together until breasts are tender. Reserve broth. Dice chicken, chill.

3 cups cooked wild rice
1½ seedless green grapes, halved
1 cup chopped unpeeled apple
½ cup finely chopped celery
½ cup chopped water chestnuts
¾ cup slivered almonds divided into ½

Dressing:
1 cup mayonnaise
½ t seasoned salt
¼ t cinnamon
Lightly mix all ingredients except ½ of almonds. Chill for at least 30 min. Serve on top of fresh spinach leave (or lettuce). Sprinkle with remaining almonds.

Mexican Steak
1pd. round steak
16oz. can crushed tomatoes
1 yellow onion, cut in rings
8oz can of diced chiles
1Tbsp Chili powder
Salt and Pepper to taste
Fry round steak, bite sizes or steak size in a skillet with a little oil.
Throw all of the ingredients in a two quart cooking pan, cook until onions are tender.
Serve over Rice....done,,,
Also, the more onion the better...and if you prefer more chile powder, have at it.
