i've always said it but never knew. stuff like this is the only reason i read catch 22. to figure out what it meant.

Great question! This is what Wikipedia has to say: "The term allegedly derives from the comparison of a cold turkey carcass and the state of a withdrawing addict — most notably, the cold sweats and goose bumps. It is often preceded by the verb "to go," as in "going cold turkey."

The original use was for when some one quit drinking. They would get sweats and chills, and their skin would have little bumps from the chills looking like a plucked turkey's skin, hence the name Cold Turkey.

It comes from the goosebumps you get when you quit smoking. Your skin resembles that of a "cold turkey".
