cover them with water in a bowl/pan n store in the fridge till mid- morning (thurs) then boil them? They should'nt brown or go bad, rt? I'm making mashed potaoes.

put lemon"only a little" in the water and that would be fine

It's fine. It's just oxidation. Same thing when you leave an apple out and it turns brownish. It happens when certain chemicals in the produce react with the air. It wont effect the taste at all. To stop that from happening, you can rub some lemon on them.

Nope, they won't go brown because they're covered in water. When I worked as a prep cook we did that all the time. Anything you can do the day before is a big stress saver!

That's perfect! They'll be fine in a bowl of cold water in the fridge. I've done it many times.

add a little lemon juice to the water...the citric acid keeps the brown discoloration from forming.
