Use your basic sponge recipe and add chocolate/cocoa powder to taste. So usually; 2 eggs, 4oz (100g) self-raising flour, 4oz butter or margarine and 4oz caster sugar. If you put in the cocoa powder and find it's too dry, add a little water, but not too much! Cover with fondant made with the same cocoa powder.

I think any will do as long as they aren't too "soft" but cover your cake in a thin skin of icing before and that should help alot- and sweeten up the fondant- a "crumble" icing-- you can just tint the premade icing from the bakery section-wiltons. Not the kind that stays soft---
