The best inspiration would probably come from looking at menus of Italian restaurants you like. There's a take-away pasta place near me that sells stuffed shells so (not by the seashore) good that I don't bother making them myself anymore. Sadly, they don't have a web site. But, trying to think of what I've seen there side-dish-wise, I thought of: marinated (spicy) eggplant, marinated mushrooms, a sort of salad of broccoli, cauliflower, red peppers, carrots & ? in an oil-and-vinegar dressing, and a variety of olives.
The suggestion for an antipasto -- "Antipasto is the Italian equivalent of hors d'œuvre, meaning "before the meal," pasto = meal. In Italian cuisine, this typically consists of savory cold foods such as cheeses and raw or marinated vegetables, as well as cold cuts and cured meats such as prosciutto" -- plate is a good one. Some sort of salad would be good, too. Balsamic dressing would go well with the red sauce on the shells. In the absence of salad, go for asparagus -- something green is needed.

A layer of thawed cut spinach . Add the shells then top with a jar of Alfredo sauce. Add a few boiled and shelled shrimp . Cook in microwave for 4 mins. EAT and ENJOY

Salads are always a good match. Perhaps spice it up some by using a different type of lettuce then normal (baby spinach or something).
Or you can have an appetizer with it. Perhaps a spinach/artichoke dip. Or maybe fried mozzerella.

I used to work in an Italian restaurant. Sauteed broccoli rabe is a great side with any italian dish, and you can find it in most grocery stores.

Both are good for you, each fruit/vegetable has different vitamins. Thus as more variety, as better. Vegetables have generally less sugar than fruits.

You can make some grilled garlic asparagus. It's amazing and very good. You need to add some color so this an awesome way to add the color plus it's delicious.
