Skirt Steak Asada Tacos
Ingredients
2 tablespoons extra-virgin olive oil
1 medium yellow onion, coarsely chopped
2 medium poblano peppers, cored, seeded and cut into thin strips
4 cloves garlic, coarsely chopped
1 tablespoon chili powder
1 teaspoon ground cumin
6 canned plum tomatoes, drained
1 teaspoon salt, plus more for grilling
2 pounds skirt steak
1 medium red onion, finely chopped
1 bunch chopped cilantro to yield 1 cup
¼ cup freshly squeezed lime juice (2 to 3 lines)
8 soft corn tortillas
3 limes cut into wedges for serving
Directions:
At home place a skillet, preferably cast iron, over medium-high heat. Add the olive oil and when it gets hot, add the yellow onion and pepper, and cook until they soften, about 8 minutes. Add the garlic, chili powder and cumin, and cook 1 minute more. Add the plum tomatoes and salt, reduce the heat to medium-low and cook 5 minutes more.
Transfer the mixture to a blender or food processor fitted with the metal blade and pulse until just smooth.
Place the skirt steaks in a resealable plastic freezer bag and add half the puree, making sure they are completely coated. Keep refrigerated or in a cold ice chest for up to 72 hours.
When you're ready to grill them, salt the steaks and grill them over medium-high heat, turning once, until they are a deep, rich brown on both sides, about 9 minutes. Transfer the steaks to a cutting board and let rest.
Meanwhile, in a medium bowl, mix together the chopped red onion, cilantro and lime juice.
Cut the steaks into ½-inch slices. Put a few slices in a warmed tortilla and add a heaping tablespoon of the onion-cilantro mixture. Squeeze some lime over the meat and then a tablespoon of the pureed sauce. Repeat to make 8 tacos.

Here is a marinade for your steak. Marinate then bake, then slice and serve on tacos...great for fajitas or tacos...yummy!
1/4 c lime juice
1 c red wine vinegar
1 TBS dry mustard
1 TBS fresh garlic, chopped
1 tsp oregano
1 tsp cumin
1 tsp paprika
2 c olive oil
salt and pepper to taste
Place all ingredients except the oil and s&p into a blender and turn on. Slowly add the oil while blending. Marinate shrimp, beef, chicken, pork or fish and then grill it. Serve with tortillas, grilled onions and peppers, sour cream, guacamole, lettuce and tomatoes.

Jerk Steak Tacos:
4 green onions, coarsely chopped
1 garlic clove
1 jalapeño pepper, seeded
1 tablespoon ground allspice
1 teaspoon dried thyme
1/2 teaspoon ground nutmeg
1/2 teaspoon ground red pepper
2 tablespoons lime juice
1 to 1 1/2 pounds flank steak
1 bunch green onions
4 large tomatoes
Vegetable cooking spray
1/4 teaspoon salt
8 (8-inch) flour tortillas, warmed
Process first 8 ingredients in a blender or food processor until smooth, stopping to scrape down sides. Spread seasoning mixture evenly over steak; cover and chill 8 hours.
Grill steak, covered with grill lid, over medium-high heat (350° to 400°) 6 to 7 minutes on each side or to desired degree of doneness. Let stand 10 minutes; cut into thin slices.
Coat 1 bunch green onions and tomatoes evenly with cooking spray; sprinkle with salt.
Grill, covered with grill lid, over medium-high heat 10 to 15 minutes, turning occasionally. Coarsely chop vegetables. Serve with steak in warm tortillas.
Yield: 8 servings

Steak Soft Tacos
1 Tbsp. oil
1 lb. boneless beef sirloin steak, cut into strips
1 cup water
1 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa
1 pkg. TACO BELL HOME ORIGINALS Taco Seasoning Mix
1 cup MINUTE White Rice, uncooked
8 TACO BELL HOME ORIGINALS Flour Tortillas
1 cup KRAFT Shredded Cheddar Cheese
HEAT oil in large skillet on medium-high heat. Add steak; cook and stir until lightly browned. Stir in water, salsa and seasoning mix. Bring to boil.
STIR in rice; cover. Remove from heat. Let stand 5 minutes. Stir.
SPOON steak mixture evenly onto tortillas; sprinkle with cheese. Fold up sides of tortillas to enclose filling.

i dont know about calling it a taco but try large wraps , strips of steak some ranch dressing sprinkle a bit of parmesean cheese on steak and cover with lettuce and pepper, tomato mmmmm good stuff
