To avoid controversy and to lower budget. Unless the location is essential to the show (ie. CSI and its spinoffs), there's no point in making it a real place. For example, a show set in NY would require an authentic look which could make the show expensive. A fake city would be easier to produce.

Because it allows them to be more creative with geography and not to be limited by local customs. For example, if on gilmore girls they are going to the walnut festival, well if it was a real town they wouldn't be able to work in the walnut festival if that town didn't have one, and even if they did the dates might be wrong!

many different reasons...one of which is, they want it to be the way they want it...if they call it pittsboro, and describe it completely different, readers would be upset...and also, if the place is real, people start assuming the characters are too, and then the rumors start to fly about who is really the character...and fiction usually aims to take people away from reality, and give them a 'better world' for a time...or at least something different than their own

would you rather them use a real town and exploit it by showing a lot of drunk people, sex, stalkers, weird men, and (for gilmore girl's case) women who have daughters that soon don't give a s*it about life?
