What are some good recipies for college? I am in a dorm room, I have: a fridge, a microwave and a toaster oven (that can cook almost anything)...

These are some simple recipes; Hope its informative. Good luck!


Easy Lasagna

this is an easy lasagna recipe that contains no ricotta cheese

Ingredients
1 pkg Lasagna noodles
1 Medium jar of spaghetti sauce
1 bag Shredded mozarella cheese
1 bag Shredded Italian mix cheese
2 lbs Lean hamburger meat
Garlic Salt

Preparation
Cook lasagna noodles according to directions on package. Brown the hamburger meat and a dash or two of garlic salt.





Preheat oven to 350.





Mix hamburger meat with spaghetti sauce and put thin layer on bottom of 9x13 baking dish. Add layer of pasta noodles.





Add layer of spaghetti sauce mixture, mozarella, Italian mix, then noodles.





Repeat until dish is full. Ending with a thin layer of cheese.





Bake for about 45 minutes. Remove from oven and let cool for 10 minutes before cutting.

Cook's Notes
This recipe is highly customizable. We sometimes add different cheeses or don't add the hamburger meat

Vegetable Casserole

Great vegetable dish that even children love to eat.

Ingredients
1/4 c Melted butter
1/4 c Flour
2 c Milk
8 oz. Cream cheese
Cauliflower, broccoli, onion, and carrots
1/2 c Grated cheese

Preparation
Melt butter, add flour and cook until bubbly. Add 2 cups milk and 8 ounces cream cheese. Cook until thick. Parboil cauliflower, broccoli, onion, and carrots. Put in a casserole dish and cover with white sauce. Sprinkle grated cheese over top of casserole. Bake at 350 until bubbly; about 30 minutes.

Chicken Chili Salad

A wonderful Mexican salad that is so tasty even my most finicky child loved it! Low in fat and filled with vegetables, protein; and a quick meal to fix for working moms and dads.

Ingredients
Salad Mix: Purple Cabbage, thinly cut carrots, lettuce, tomatoes, olives or whatever salad mixings you like
or 1 bag Prepared salad mix
1 can Chicken Chili.
1/4 cup Shredded cheddar cheese

Preparation
1. Heat one can of chicken chili in saucepan or in the microwave.


2. Make salad (best if cut fine) with lots of lettuce, tomatoes and olives (or whatever vegetables you like-we use purple cabbage and carrots thinly cut). Put desired amount in dish or bowl. No need for salad dressing.


3. Pour desired amount of chili on top of salad. Sprinkle with cheese. Serve with corn chips if desired. We use vegetable chips most of the time.

Cook's Notes
My daughter loves this salad because of the texture and taste.
I love it because its healthy and quick to make after a long day at work.

Chicken Rolls
So easy to make and everyone loves them!

Ingredients
1 cup Seasoned bread crumbs
2 pkg Crescent rolls (6 rolls total)
6 oz Lowfat cream cheese*
1/4 cup Butter
2 Green onion, chopped fine
1/2 tsp Pepper
1 can Mushrooms, drained, chopped
2 cups Cooked chicken, diced
Butter flavored cooking spray
Sauce:
1 can Reduced-fat cream of mushroom soup*
1 can Reduced-fat cream of chicken soup*
1 Soup can full of lowfat milk

Preparation
1. Mix cream cheese and butter; cream well. Add the green onion, pepper, mushrooms and chicken; stir well until everything is coated.

2. Flatten crescent rolls slightly. Put cream cheese mixture on one side of crescent triangle, rollup, spray with butter flavored cooking spray and sprinkle all of them with bread crumbs.

Cheese Baked Eggs

Great for Brunch.

Ingredients
2 cups Low-fat milk
1 cup Shredded cheddar cheese
1 dozen Eggs
1/4 tsp Hot pepper sauce (optional)
Salt & pepper to taste

Preparation
Beat together milk, eggs and season with salt, pepper and hot pepper sauce. Sprinkle cheese in greased 9x9x2 inch baking pan and pour on egg mixture. Bake at 350 degrees for 45 minutes to 1 hour or until set.

Cook's Notes
Pair this dish with a fruit salad and some whole-wheat toast for a complete, balanced breakfast.

Easy Baked Salmon

Enjoy the essense of salmon with this quick and easy recipe. Although this recipe appears to be high in fat, salmon is considered a good source of beneficial omega fatty acids.

Ingredients
1 1/2 lbs Fresh salmon fillet or steaks
1 tbsp Butter
1/2 tsp Dill

Preparation
Preheat oven to 500. Put fish on foil-lined baking sheet. Dot with butter and sprinkle with dill.





Bake 10 minutes for each inch of thickness. Salmon should be opaque but not dry.

Cook's Notes
Serve salmon with lemon wedges. Rice, your favorite green vegetable, and warm French bread with butter make this a family meal good enough for company.

Caesar Chicken Wraps

These are great wraps for lunch and they are hearty enough for dinner too!

Ingredients
1/2 cup Lowfat Caesar salad dressing
1/2 cup Grated Parmesan cheese, divided
1 tsp Lemon juice
1 Garlic clove, minced
1/4 tsp Pepper
1 package (8 oz) lowfat cream cheese, softened
3 cups Shredded romaine
1/2 cup Diced sweet red pepper
1 can (2-1/4 oz) sliced ripe olives, drained
5 Flour tortillas (10 inches)
1-3/4 cups Cubed cooked chicken

Preparation
In a small bowl, combine the salad dressing, 1/4 cup Parmesan cheese, lemon juice, garlic and pepper. In a small mixing bowl, beat the cream cheese until smooth. Add half of the salad dressing mixture and mix well; set aside.


In a large bowl, combine the romaine, red pepper, and olives. Add the remaining salad dressing mixture; toss to coat. Spread about 1/4 cup cream cheese mixture on each tortilla. Top with the romaine mixture and chicken; sprinkle with remaining Parmesan cheese. Roll up, cut in half, and serve.

Cook's Notes
If I am making this for just one serving, I keep the lettuce, cream cheese, and salad dressing mixture all separate until ready to serve. Otherwise, the lettuce gets soggy.



3. Bake at 350 degrees for 20 minutes



Sauce: Mix cream of mushroom and cream of chicken soup with milk over stove to warm. Drizzle on top of baked crescent rolls, or place on the side for dipping.

Cook's Notes
These may be frozen. Best if re-heated in oven. *Orginal recipe calls for full-fat version of cream cheese and cream soups. This would increase fat and calorie content.

Chilequiles made in the corn chip bag. What? Get a bag of corn chips like Tostito Chips or any generic brand that is just the corn tortillas, no flavors. Get some velveeta cheese or cheese whiz in a jar, melt in the micro with a touch of butter. Open a can of chicken and add it to the cheese, some diced onion, and some salsa (I like mine hot). Add the mixture to the corn chips in the bag. Make sure that all the chips are soaked, roll up the top of the bag and put in the microwave for 5 minutes then flip and 3 minutes. Take out and cut the bag in half. Cut in squares with a knife and you have chilequiles. Get some instant rice, put in microwaveable dish. Get some chicken broth (can) add some canned chicken, a packet of Goya seasoning, salt and pepper, some diced onion and diced tomatoe. Cook in micro. Arroz con Pollo. New way to make ramen - do not add package of seasoning to it. Cook in water, drain, add soy sauce, touch of salsa, a touch of peanut butter, a little bit of syrup, and crushed nuts and cooked brocolli. Ramen - use seasoning in water with melted velveta and can of tuna, diced onion and tomatoes. Ramen - cook with seasoning, add salsa to water. Drain add mayo and tuna, diced green onion. Buy some pork rinds the seasoned kind, a can of Las Palmas enchilada chili. Put rinds in a microwaveable bowl, add chili, soak, add dice onions, nuke and make burritos. Get some potato chips (jalapeno or maui onion best, but regular okay) put in a bowl with the seasoning from top ramen. Dice some onion, some tomatoe, and some kelbasa sausage. Add to potato chips with water and cook for about 5 minutes. Add some velveeta cheese and cook another 3 minutes stirring. Make potato burritos. Hope this helps.

You need a cooking for one or two cookbook.

Most of these recipes look good except for the amount.

A mini crockpot would probably be handy.

Go to kraftfoods.com you can subscribe to a great magazine and there are hundreds of easy recipes you can check on line you can even store your favorites on line in a recipe box. Thats spelled Recipe...Took me years to get that spelling right. Campbells.com also has great recipes using soups
