Southern Fried Chicken
1 (3-pound) chicken, in parts

Flour

Salt and pepper

Shortening

Wash the chicken and pat dry, then cut into serving pieces. Dredge in flour, then shake excess flour off. Season with salt and pepper.

To fry the chicken, heat shortening or olive oil in a deep, heavy pan over high heat; use enough fat for a depth of at least 3 inches in the pan. Using a deep-frying thermometer, heat the oil to 360 degrees.

Put several pieces of chicken at a time into the hot oil, beginning with the legs and thighs, then the wings and breast. Do not overcrowd the pan. You may have to prepare the chicken in several batches.

For a crisp, crackling-like skin, cover the pan for most of the cooking time, uncovering it to turn the chicken occasionally. Remove the cover for the last 5 minutes or so of frying time. The chicken is done when it is golden brown and the juices run clear when pierced with a fork. The thighs and legs should cook in 20 to 25 minutes, the wings in 18 to 20 minutes, and the breast in 15 minutes or so. If the oil temperature drops, let it heat back up before adding more chicken.

Drain fried chicken on paper towels; repeat with remaining uncooked chicken.

I put the chicken pieces in a bowl of evaporated milk and put in refrigerator for an hour, Shake in a bag of flour with salt in it. Fry in Crisco in electric frying pan. Turn pieces to brown on all sides. Simple and really good. I skin the chicken so we won't have to take it off after and lose the browned outside. Good luck.

This is the best recipe I have ever had!
Soak the chicken in buttermilk with about 3 tablespoons hot sauce (dosen't make it hot just adds loads of flavor) for at least a few hours preferably overnight. drain.
Mix flower, salt, pepper, garlic, onion powder, poultry seasoning in a plastic bag
Egg wash (egg and milk) in a bowl
Lay chicken on a paper towel dip into egg wash then shake in bag place on a plate to rest for a few minutes before putting in oil.
Cook in a large cast iron skillet on med heat with about a quarter inch of hot oil place thigh peices in the middle (they take longer to cook and the midddle of the pan is the hottest part. Cook each side approximately 12 minutes until juices run clear when punctured.
When chicken is done drain on paper towel lined plate
Empty oil from pan reserving bits on bottem and a few tablespoons oil. Sprinkle skillet with flour (still on med heat) and whisk flower into oil and allow to cook until brown in color. Add milk (approximately 1 qt) and stir allow to simmer add salt and pepper to taste. Fried chicken with milk gravy the best there is. Hot homeade biscuits with this is heaven!

I drive down the street to Popeyes and go home and take it out of the box and put it on my plate and VOILA, chicken!!!! I love Popeyes. I do actually have a good recipe but it would take me FOREVER to type it out sorry!!

easiest way is to coat it in corn flour...

or just crumb it by putting the chicken into flour patting it off then into egg thats scrambled... then letting that drain off and then putting it into bread crumbs...
