Vaya con Dios means "Go with God" literally. It's like saying God be with you.

following on from Jeremy's great answer, it's the same with the French 'adieu', a kind of farewell recommending you to God

As already stated here, yes it means "go with God". Our own mean of bidding farewell means nearly the same - goodbye is decended from the Old English words for "God be with ye" although only the spelling and not the pronunciation give an indication of this. "Adios" would appear to have a similar etymology (a being "to" and dios being "God"). Just an interesting bit of trivia.
