Not a drinker nor gambler myself but have been to Vegas 3 times. Each for a different reason.
Firstly, in downtown, many of the major hotels have free nightly shows outside that you see from the street. Also, just touring the lobbies of these hotels takes several hours each and is eye candy. Some hotels have rides (NY-NY, etc.)
Nearby, there's excellent hiking in and around Boulder City (visit the Coffee Cup for breakfast), Mt. Charleston and Red Rock Canyon--to name a few. I hiked the mountains around L.V. 5 days in a row, never the same place twice. There's activities on Lake Mead. Also in December (don't know which week), there's Desert Dash (multi-sport adventure racing).
If it's food you love, there's lots of mediocre to decent low price food. Also, there's fine dining to be had too.
There's lots of shows from things like female mud wrestling to others like Cirque De Solei/Zumaniti (I know it's spelled wrong--if they're still there)
If you love getting stuff cheap, take lots of cash for the pawn shops. You may or may not be surprised at what people part with so they can keep gambling. You may find a few good deals.

Depends on your age. The circus circus has a theme park called the adventure dome that a lot of people love to see. You can go to lake mead which is right outside of boulder city (I think it was made by the Hoover Dam) and swim or go boating. If you are looking for other stuff though, they are a few golf clubs, and most of the hotels have some fun things to do. If you like to browse, you can walk the strip. The Bellagio has a really fun water show where the water is dancing (you have to see it to get it), and the hotels have great architecture you can check out. Plus, Las Vegas has some great natural history museums and art galleries (but the galleries are usually in the hotels, i.e the bellagio or Venetian).

The Jaguar, put a roll of money in your left hand, a cigar in your right, buy $3.00 beers and you will be attacked.
TAO nightclub, Thursday is INDUSTRY night at a lot of places, that means no cover etc.
Go to RUM JUNGLE before cover 11PM and people watch.
The Buffet for Breakfast at the Palms is cheap and excellent.
The locals are friendly, I would go on a dating webpage for sure.
If that applies, if not, look at or shop at some of the Pre-Construction Condos. Tour Summerlin, Check out THE FORUM SHOPs. Freemont Street Arcade.
Drive 20 mins to Lake Las Vegas.

Hike! Everytime I go to Vegas, I make a trip out to Valley of the Fire, Red Rock or Lake Mead. Vegas is a great area for nature! Beautiful desert scenery, fresh air, wildlife. I miss it so much!

The food is incredible an so inexpensive! Most of the hotels have a swimming pool, and the shows at the hotel are less expensive and very fun! Walking down the strip at night is an incredible sight, with all the light shows, and people. It is a lot of fun! There are lots of ways to enjoy yourself in LV. Enjoy.

Eat your face off! The Sunday Brunch buffett at Mandalay Bay is GREAT. America cafe in NYNY makes AWESOME breakfast! They say the buffet at Bally's and Mirage are fantastic too. For Mexican food, I recommend the Pink Taco at the Hard Rock Hotel.
If you can think of it, cuisine-wise, it can be done! =)
BTW - people watching is the BEST free entertainment! I can kill a couple of hours easily doing that. (You'll see some major fashion disasters, among other issues!)
