Tarantino has admitted that there is no official explanation behind the briefcase's contents, and that it was simply written into the screen play as an intriguing McGuffin
A McGuffin is a plot device that motivates the characters and advances the story, but has little other relevance to the story itself.
Others believe it was Marsellus Wallace's soul
Remember the first time you were introduced to Marsellus. The first shot of him was of the back of his head, complete with band-aid. Then, remember the combination of the lock on the briefcase was 666. Then, remember that whenever anyone opened the briefcase, it glowed, and they were in amazement at how beautiful it was; they were speechless. Now, bring in some Bible knowledge, and remember that when the devil takes your soul, he takes it from the back of your head.
Yep, you guessed it. What is the most beautiful thing about a person: his soul. Marsellus Wallace had sold his soul to the devil, and was trying to buy it back. The three kids in the beginning of the movie were the devil's helpers. And remember that when the kid at the end came out of the bathroom with a "hand cannon," Jules and Vincent were not harmed by the bullets. "God came down and stopped the bullets" because they were saving a soul. It was divine intervention
Ronin's briefcase is also a McGuffin

Oddly, I never thought about it until I read your question, although
I haven't seen the movie in a while, either, so maybe it was mentioned and I don't recall.
I think I always figured it was money in the briefcase Jules was transporting to his boss, Marcellus Wallace. I don't know that it was ever spelled out or specifically mentioned, but I guess I had the impression that the three young dorks were holding out on Marcellus and Jules and Vince were there to retrieve what belonged to their boss.
Furthermore, the fact that Jules was willing to sacrifice his life for the contents gives the contents value and importance. Therefore, what is actually IN the briefcase doesn't necessarily need to be identified so long as we believe, through the characters' actions, that the contents are worth dying for rather than giving up to someone.
I've seen RONIN several times and we're never told what's in the briefcase. The closest we get is in the beginning of the movie when the Natasha McElhone character skirts around Sam's (Robert DeNiro) careful inquisition. Sam is the only one of the hired crew who ultimately knows its contents and when Vincent (Jean Reno) asks Sam all Sam replies is: "I don't remember."

Marsellus Wallace's laundry is one theory. But it's actually a MacGuffin called mystery. It's Pandora's Box.
