here's a simple recipe for chicken - to be served with baked potato or rice.
LEMON CHICKEN
INGREDIENTS:
* 2 (6 pound) whole chicken, quartered
* 1 dash garlic powder
* 1 pinch salt
* 1 pinch ground black pepper
* 2 onions, thinly sliced
* 2 green bell pepper, sliced
*2 lemons, juiced
* 1/2 cup white wine
* 1 pinch dried parsley
DIRECTIONS:
1. Preheat oven to 375 degrees F (190 degrees C).
2. Season chicken with garlic powder, salt and pepper. Place in 9 x 13 inch baking dish. Add onion and bell pepper slices by placing on top of chicken. Pour lemon juice and wine over entire chicken. Cover with foil.
3. Bake for 1 hour. Remove foil, and brown for about 15 minutes longer. Garnish with parsley flakes, and serve.
It doesn't say to soak the chicken in the juice overnight, but you sure could, I bet it'd be delicious and tender!

A Zesty Chicken
You can cook this on the grill, or bake it.
Ingredients:
4 boneless skinless chicken breasts
1 cup water
1/3 cup white wine vinegar
1 Tablespoon Worcestershire Sauce
1 Tablespoon garlic salt
1 Tablespoon butter
Pepper to taste
Mix together water and vinegar in small pot. Add Worcestershire Sauce, garlic salt, butter, and pepper. Bring to full boil. On the grill, baste while grilling. Do not reuse leftover mixture. To bake, line a jelly roll pan with foil and baste chicken a few times while baking at 350 degrees F for about half an hour.
Even simpler:
Baste chicken with soy sauce and Mrs. Dash while grilling.

Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Cordon Bleu for Two
2 Boneless Skinless Chicken Breasts
4 slices of Ham
1 small block of spreadable Cheese (garlic & herb is best)
1/3 cup Italian Bread Crumbs
2 tbsp Pamesian Cheese
2 tbsp Butter
Pound chicken breasts to 1/4" thick with a meat malet. Spread a thin layer of cheese on chicken. Top with 1 or 2 slices of ham. Roll up each breast and secure with a toothpick. Combine bread crumbs, and Parmesian cheese... roll chicken in crumbs.
Place in cooking dish and dizzle melted butter over chicken.
*remove toothpicks!
Bake uncovered at 350 degrees for 40 to 45 minutes- or till chicken is done.

Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

A DIFFERENT PASTA DISH
Received from Chef Leo, Prince Macaroni Resturant
1 box pasta "shells" cooked
2 cans minced clams
Lots of smashed garlic
1 stick butter or like butter
Salt, pepper, parsley (fresh chopped is best)
1 bottle clam juice.
Saute all of the above ingredients till almost boiling. Pour over pasta shells. Pour into a bowl and eat with a spoon. YUM

well heres what u do...find a neighbor that owns a dog. when this certain person walks the dog follow him but not too closely, if you follow to close and get caught it would be extremely akward. when the dog does his business simple swoop in from behind and snatch the patty. once youve retrieved the patty take it home and seal it in a ziplock, freshness is key. now, the taste is all in the preparation. depending on ur preference choose an appropiate amount of time to stick it in the microwave. heres the trick tho, you must only cook it with prime numbers, 11,17,19,23 seconds or your meal will be ruined. once u are finished cooking, just plate it and add a little shredded coconut along the top and u are ready to eat like a king

One of my personal favorite dinners: Hidden Chicken
*One whole roasting chicken (or 2-3 lbs of skinless-boneless chicken breasts)
*Two cups white rice - NOT instant
*One can each Cream of Mushroom & Cream of Chicken (or two of one)
*Two cans of water
*Pepper & salt to taste
Preheat oven to 350. Arrange chicken in a single layer in a Pam-sprayed roasting pan. (I've also used Reynolds aluminum foil bags for REALLY easy clean up.) Salt and pepper chicken. In a seperate bowl, mix together rice and soup and water. Pour over chicken. Cover tightly - I use aluminum foil. Cook for 1 hour. Uncover. If rice is still soupy, cook an additional 15-30 minutes.

Chinese chicken salad. If you want it super easy, buy the chicken pre-cooked, the greens pre-chopped, and the peanut sauce in a bottle (but it's ohhhhh so much better homemade). If you do it homemade, cook the chicken in a pan with a little ghee, salt, & pepper, whack up a bunch of Napa cabbage, and get a peanut sauce recipe off of any decent recipe website. Basic shopping list for homemade would be boneless chicken breast, Napa cabbage, peanut butter, rice vinegar, soy sauce, fresh ginger, honey, and cilantro and scallions on top if you like 'em. YUM!!!
PS: If you want my own personal recipe, just write (but it won't get to you in time for tonight - I gotta get back to work!).

Shrimp Fried Rice:
Sauté snow peas for a side dish.
3 (3 1/2-ounce) bags boil-in-bag long-grain rice
1 (10-ounce) package frozen green peas
Cooking spray
2 large eggs, lightly beaten
1 tablespoon canola oil
1 cup chopped green onions
1 tablespoon bottled ground fresh ginger (such as Spice World)
12 ounces medium shrimp, peeled and deveined
2 tablespoons rice vinegar
2 tablespoons low-sodium soy sauce
1 teaspoon dark sesame oil
1/4 teaspoon salt
Dash of crushed red pepper
Cook rice according to package directions, omitting salt and fat. Drain. Remove rice from bags, and return to pan. Add peas to the pan, stirring well. Cover and keep warm.
Heat a nonstick skillet over medium-high heat. Coat pan with cooking spray. Add eggs to pan; cook 1 minute or until set. Remove eggs from pan; coarsely chop. Return pan to heat; add canola oil to pan. Add onions and ginger to pan; sauté 1 minute. Add shrimp to pan; sauté 2 minutes or until shrimp are done.
Add shrimp mixture and eggs to rice mixture; stir well. Combine vinegar and the remaining ingredients, stirring well. Drizzle vinegar mixture over rice mixture; stir well.
Yield: 6 servings (serving size: about 1 1/2 cups)
