you can buy a huge can of green beans at walmart for like $3.00
(reastarant size)
cook in huge pot
1 huge can of green beans
1 large onion diced
1 package of smoked sausage( i use butterball turkey sausage)
and 1 small bag of new potatoes( i use baby yukon golds)
cook down for hours and until the potatoes are done
YUMMY :)
I can useually make this for 7 or 8 bucks it makes alot and it is cheep!!

This is really tasty!
an old favourite...
Country potato Salad
6 strips bacon
2 lbs small red potatoes
1 bell pepper, seeded and chopped
1 green onion, minced
1 clove garlic, minced
2 hard boiled eggs, chopped
1/2 cup real mayonnaise
1 tablespoon cider vinegar
1/4 teaspoon celery seed
1 teaspoon brown mustard
salt and pepper, to taste
In a skillet, sauté bacon, green pepper and garlic just until edges of bacon become crispy. Drain on paper towels. Reserve a few tablespoons of the drippings from the bacon.
Place potatoes in cold water in a medium saucepan. Add 1 teaspoon salt and a small amount of the reserved bacon drippings. Boil until fork tender, about 15 minutes. Drain and cool. Cut into 1 inch cubes.
In a small bowl, combine mayonnaise, mustard, cider vinegar, celery seed, salt, and pepper.
Combine potatoes, green onion, and chopped eggs; add bacon, pepper and garlic mixture. Season with salt and pepper, to taste.
Note: Use a combination of red and green bell peppers for extra color. If red potatoes are not available, use new or baby white potatoes instead.

I'd do the baked potatoes. Check with your host first to make sure they aren't doing them.
Wash the potatoes first.
Boil potatoes for about 15 min
Wrap potatoes in tin foil
Host can then put them on the grill before he puts the steaks on.
Bring extra toppings
Cheese
Bacon Bits
Chives
Sour Cream
Or, I would do a Broccoli, cheese and rice casserole.

This Napa Slaw is great and easy and lasts a while outdoors.
Combine:
1bag cole slaw mix (just the cabbage, no mayo)
1bag shredded carrot
1bag purple cabbage
1bag brocoli slaw (optional)
toss all together
Dressing - add then so it marinates or at the picnic
(amounts are up to you for taste)
Honey Mustard Salad Dressing (or honey and mustard mixed together
crushed red pepper flakes
Juice of at least two lemons
Pour into slaw mix and toss generously
You can top with crunchy lo-mein noodles at the picnic for added texture
I have used this many times, cant go wrong!

A lovely Pasta Salad - cook pasta spirals or bows (al dente). Let it cool. Its really a matter of your own taste and you can add lots of different ingrediants. Here are some ideas that I use:
Stir in a tblsp of sesame oil, a tblsp of mayo, add salt and pepper.
Add some sweetcorn, chopped red pepper, chopped green pepper, even some pineapple chunks if desired!
It is a colourful side salad with a lovely nutty taste.

Covered dish to me means hot food, but if that is not what you have to bring -- I say fruit salad. Make your own. Cut up fresh fruit, great right now, sprinkle with a little lemon to keep some things from browning. Use bananas, apples, grapes, melons, and maybe a can of mandarin oranges, and maraschino cherries.

Stuffed baked potato:
bake potato's until cooked (1 hr. at 350-375 oven)
carefully remove potato leaving the peel intact
mix potato, butter, milk, grated cheese and chives - add salt and pepper to taste
spoon potato mixture back into the peels and top with grated cheese
reheat when you are ready to serve
