I use one pack of noodles, 2-8oz. packs of cream cheese, 2lbs. lean ground chuck, lots of green oninons, garlic powder, salt, pepper to taste. I top it with tomatoe basil sauce and depending on the mood and time; I bake it with cheese on top, or I just sprinke cheese on top when serving from the stove.

i have never made manicotti but it sounds good

I put whole milk ricotta, shredded mozzarella, egg, parsley, salt and pepper to taste in a blender. Place mixture in cooked manicotti shells. Place in pan that has sauce in it. Top manicotti with some tomato sauce and shredded mozzarella cheese. Bake until
cheese melts and bubbles. Do not burn it.

I would use Ricotta cheese instead of cream cheese - it wll be lighter and not as pasty in the middle. Or a mix of ricotta and mozzerella (anything else is just not the italian way).

a creame cheese/cottage cheese blend is better for blintzes

That sounds good.
I'm not much of a meat person so I keep it basic...1 tub Fat free Ricotta- mixed with some mozzerrella and itailan herbs and salt stuff it, top with more mozzerella, parmigan and sauce.

I use a mixture of whole milk ricotta and finely chopped spinach,
Saute`the spinach in a little olive oil, squeeze out liquid using a clean towel or cheese cloth. Chop fine, mix with ricotta, put into a pastry bag . pipe

i like to take chicken with cream cheese with a few minced or sauteed onions some green chili's with some Parmesan cheese and then cover it with garlic Alfredo sauce

I stuff them w/ mozzarella mixed w/ ricotta & salt. I top w/ a homemade Alfredo sauce.
