I have zuchinni, mushrooms, spinach and tomatoes . Do I have to precook them? I am planning on letting the sauce simmer for 1hr.

Only the zucchini needs to be sauteed for a few minutes (depending on chop size) before throwing it into the pot!
The spinach should be tossed it during the last few minutes of cooking or it will end up an ugly green mess....

you might want to precook the zuchinni. I am not sure that it will cook down in an hour at a simmer. Of course, maybe you do not mind them having a bit of crunch to them.

as the vegetables mentioned are soft to begin with, and you are planing to simmer for an hour, you would have no need to pre-cook. If you were adding a hard veggie, such as carrots, you should slightly pre-cook them.

No. An alternative way is to saute the veggies and add them to your sauce a few minutes before serving so that they are crisp. That's the whole idea of primavera.

if you precook them they will be mush by the time you serve this. why not leave the spinach out and add carrots, the spinach can be a side dish if you like

Steam them,they taste so much better,and hold vitamins too.
