How about blending cream cheese with the pineapple and making canapes with the crackers?
I wouldn't mix too many ingredients with cheese and pineapple at the very most you can maybe tease it with a sprig of rosemary if it's an herb you and your guests like.

PINEAPPLE CASSEROLE
2 cans (16 oz. each) crushed pineapple, drained
1 cup grated cheddar cheese
1 cup sugar
3 tbsp flour
1 sleeve Ritz crackers, crushed
1 stick (1/2 cup) butter, melted
Preheat oven to 350 degrees F.
Place drained pineapple on bottom of a 2 quart casserole dish.
Mix together cheese, sugar, and flour and spread over pineapple.
Mix crushed Ritz crackers with melted butter and spread over top of cheese mixture.
Bake at 350 degrees for 25 minutes.
Note: Can double recipe and use a 13x9-inch baking pan.

Baked Pineapple with Cheese

Ingredients
1/2 cup sugar
3 Tablespoons flour
Two 15.5-ounce cans pineapple tidbits packed in own juice, drained
2 cups mild cheddar cheese, grated, or 1 cup each cheddar and Velveeta processed cheese
1 stick butter
1 stack Ritz crackers, crushed
Mix sugar and flour together. Add pineapple and cheese; toss thoroughly. Place in 1-1/2 quart casserole. Melt butter; add crackers and toss to coat. Spread on pineapple mixture. Bake in 350-degree oven for 30 minutes. May be prepared ahead.

Serves: 8

3 tbsp. pineapple juice
1 c. grated Cheddar cheese
1/3 c. butter
1 1/2 c. Ritz crackers, crushed

Mix first 5 ingredients, pour into 1 quart casserole. Crush crackers and sprinkle over top. Bake at 350 degrees for 20 minutes. Good for brunch.

Baked Pineapple
This is a wonderful side dish to add a little something special to green beans and mashed potatoes. It is so delicious you will think you could eat it for dessert.
INGREDIENTS:
1 (20 ounce) can unsweetened pineapple chunks
3 tablespoons white sugar
6 tablespoons butter, melted
3 tablespoons all-purpose flour
5 ounces shredded Cheddar cheese
25 buttery round crackers, crumbled

DIRECTIONS:
Drain pineapple, reserving 3 tablespoons juice.
Combine pineapple, reserved juice, sugar, butter or margarine, flour, and cheese. Mix well. Spoon mixture into a buttered 1 1/2 quart baking dish; top with cracker crumbs.
Bake at 350 degrees F (175 degrees C) for 30 minutes, or until bubbly.

Well you could put the pinapple and cheese on the ritz crackers. But I dont' know how that would taste. Go to recipes.com and you can put in whatever ingredients you have and they will come up with recipes for you.

Or it could also be a Pineapple cheeseball rolled in crushed ritz crackers.
