Recipe I received from my Mother. She doen't know where she got it from, but it makes a really nice light dessert for summer.
36-38 large white marshmallows
1/2 cup milk
1 cup whipping cream, whipped
1 (20 ounce) can fruit cocktail
1 box graham wafers, crushed
1/4 cup butter, softened (to start)
1. Slowly heat milk on low heat.
2. DO NOT BOIL.
3. Add marshmellow and melt.
4. Cool.
5. Combine whipping cream and fruit cocktail.
6. Fold into cooled marshmellow mixture.
7. Combine graham wafer crumbs and butter.
8. Mix thoroughly adding more butter if needed.
9. Press firmly into an 8" by 12" pan reserving some to sprinkle on top of dessert.
10. Top with cocktail mixture.
11. Sprinkle reserved graham wafer mixture over top.
12. Refrigerate at least 3 hours.
13. Cut into squares and serve.

This recipe is quick and easy, also tastes soooo good!!
CHOCOLATE MOUSSE
Place in a blender:
2 cups chocolate pieces
1/2 cup sugar
3 eggs
3 tablespoons brandy
1 cup boiling milk
Blend until smooth, about 30 seconds. Pour into 8 dessert dishes and chill until ready to serve, at least 1 hour. And if you like, top with whipped cream, fruit, coconuts, nuts, etc.

Banana Ice Cream
Yield: about 1 quart
6 (approximately 2-1/4 pounds) ripe bananas
1 tablespoon fresh squeezed lemon juice
3/4 cup light corn syrup
1 vanilla bean, scraped
1-1/2 cups heavy cream
Place bananas in freezer and freeze overnight. Remove bananas from freezer and allow to thaw for 45 minutes to 1 hour. Peel bananas and place in bowl of food processor along with the lemon juice. Process for 10-15 seconds. Add corn syrup and vanilla bean seeds and turn processor on. Slowly pour in the heavy cream. Process until smooth.
Chill mixture in refrigerator until it reaches 40 degrees. Transfer the mixture to an ice cream maker and process according to the manufacturer's instructions. Place mixture in an airtight container and freeze for 3-6 hours before serving.

One of the simplest desserts I've ever made is really very easy but quite good. Serve fresh or frozen fruit (sliced peaches, canteloupe, honeydew melon, berries, etc.) with ice cream or vanilla yogurt. You could also make shortcakes using either homemade or store bought cake bottoms. Just add fruit and whipped cream. Easy but delicious. And a scoop of vanilla ice cream with a couple of brownie pieces is very good too.

BANANAS FOSTER (for two)- In a frying pan, 1 tbsp Butter, 3 tbsp Brown sugar and one banana sliced length wise and halved. Cook on moderate heat adding rum and a pinch of cinnamon until bananas soften and the sauce begins to thicken (Caramelize). Remove from heat and serve over Vanilla ice cream (in large red wine glasses is nice) and serve immediately.

I know this first one might sound weird...but it is SOOOO good!!
Cherry Pineapple Crumble
1 20oz. Can Crushed Pineapple (do NOT drain)
1 20oz. Can Cherry Pie Filling
1 Box White or Yellow Cake Mix
1 Stick Butter
1 – 1 ½ Cups Powdered Sugar
Warm Water
Preheat oven to 350 degrees. In a cake pan (8x13) spread crushed pineapple and juice. Spread cherry pie filling over pineapple. Sprinkle cake mix (dry) over fruit. Cut stick of butter into thin pats and top cake mix with pats of butter. Bake 30 minutes.
After the crumble comes out of the oven mix the powdered sugar with enough warm water to make glaze. Pour glaze over the crumble. Best served at room temperature. Top with ice cream if desired.

My Sister Maria's Easy Apple Cake and Ice Cream

Cook Time: 25 minutes
Yield: 6 servings
1 box yellow cake mix for a single layer cake, (recommended: Jiffy brand) prepared to package directions
2 tablespoons softened butter
1 McIntosh apple, diced
1/2 teaspoon ground cinnamon
1/4 cup sugar
1 pint butter pecan or rum raisin ice cream
Preheat oven to directions on box. Mix cake mix to directions on box, using 1/2 cup water and 1 egg. Grease a 9 by 9-inch square cake pan or disposable cake pan with butter. Pour in cake batter. Toss apples with cinnamon and sugar and sprinkle on top of cake batter. Bake 20 to 25 minutes. Serve warm cake squares with small scoops of butter pecan or rum raisin ice cream.

KOOL-AID CAKE
1 box cake mix your choice
1 box powdered sugar
1 pack Kool-Aid, your choice
1 carton or can of milk, your choice
Make cake according to directions on the box. Mix a half a box
of powdered sugar and about half a pack of Kool-Aid, you can mix
the whole pack of Kool-Aid to fit your taste. Mix well. Stir in
the milk a little at a time to get the thickness you desire. After cake cools before putting on the icing put a few holes in the cake, so as to let some of the icing soak in the cake.
Creamy Lemon Pie
1-3/4 cups cold milk
juice from 2 lemons, strained
1 package instant vanilla pudding
1 package instant lemon pudding
1 small box lemon jello (do not add water..just add the powdered jello)
1 8-oz. tub Cool Whip, thawed
1 graham cracker crust
Pour milk into large bowl. Add dry pudding mixes and jello. Beat with wire whisk 1 minute. Add lemon juice; beat an additional minute or until well blended. (Mixture will be thick) Gently stir in whipped topping. Spoon into crust.
OOEY GOOEY BUTTER CAKE
1 box yellow cake mix
1 egg
1 stick butter, melted
TOPPING:
8 oz. cream cheese, softened
2 eggs
1 tsp. vanilla extract
16 oz. confectioner's sugar
1 stick butter, melted
Preheat oven to 350 degrees. Mix all cake ingredients together and spread into a 9"x13" baking pan. Mixture will be stiff. Mix together all topping ingredients and pour over batter. Bake 40 minutes then allow to cool before cutting into squares. DO NOT prepare cake by the box directions.
Twinkie Quickie
1 box Twinkies
1 large box instant banana cream pudding
2-3 ripe bananas
large container Cool Whip
chopped nuts or crushed candy topping of your choice
Cut Twinkies in half the long way and place cut side down, filling bottom of a 9x13" pan. Make the pudding according to directions on the package and pour evenly over Twinkies. Slice bananas and place over the pudding. Cover all with cool whip. Top with your choice of toppings and refrigerate at least one hour before serving.
Layered Ice Cream Dessert
1st layer - ice cream sandwiches
2nd layer - pour caramel ice cream syrup
3rd layer - ice cream sandwiches
4th layer - more ice cream syrup
5th layer - whipped topping
6th layer - crushed Skor or Heath candy bars
In a 9x13x2-inch pan, layer all ingredients in the order given. Freeze till ready to serve.

Cinnamon Crispy Bread
Buy Italian bread, slice in 3/4s - slather with butter, throw in oven until brown - then retrieve and sprinkle lots of cinnamon sugar over it - a great treat!!

Buy an already made pizza crust like Boboli, mix 8 oz. of cream cheese and 1 cup of powered sugar together, smear it all over the pizza crust. Slice strawberries,kiwi and grapes up and place all around your pizza crust. I call it "desert pizza" serve it cold.

Chocolate Cherry Cake
1 package devils food cake mix, dry
3 eggs
1 can cherry pie filling
1 teaspoon almond extract
1 cup chocolate chips
In a large bowl combine all of the ingredients and mix well. Pour into a greased and floured 9 x 13-inch baking pan. Bake at 350-degrees for 45 minutes. Serve with whip cream or ice cream.

1 cup graham cracker crumbs
3 Tbs. sugar

3 pkg. (8 oz. each) cream cheese, softened
3/4 cup sugar
3 eggs
3/4 tsp. vanilla extract
TOPPING:
2 1/2 cups chopped peeled apples
1 Tbs. lemon juice
1/4 cup sugar
1/2 tsp. ground cinnamon
6 Tbs. caramel ice cream topping, divided
Sweetened whipped cream
2 Tbs. chopped pecans
Combine the first five ingredients; press onto the bottom of a lightly greased 9" springform pan. Bake at 350 degrees for 10 minutes; cool. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low just until combined. Stir in vanilla. Pour over crust. Toss apples with lemon juice, sugar and cinnamon; spoon over filling. Bake at 350 degrees for 55-60 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen. Drizzle with 4 Tbs. caramel topping. Cool for 1 hour. Chill overnight. Remove sides of pan. Just before serving, garnish with whipped cream. Drizzle with remaining caramel; sprinkle with pecans. Store in refrigerator.
