Here's a recipe for a healthier version: It's good - I cook this a lot.
1 small sweet potato, cut into "French fry" sticks
1/2 teaspoon canola oil
Salt, pepper, garlic powder and paprika, to taste
Cooking spray
Preheat oven to 450 degrees. In medium bowl, toss sweet potato sticks with oil and seasonings. Put sticks in baking dish sprayed with cooking spray. Bake 30 minutes, turning after 15 minutes.

If your looking for lowfat, just cut the sweet potato into whatever size fry you like, spread on a cookie sheet, spray with PAM
(olive oil) cooking spray and season as desired. Bake in oven about 350 degees. YUM!

As strange as this sounds, I found frozen sweet potato french fries at Target. They are yummy (I suggest sprinkling some lowry's seasoning salt on them when they first come out of the oven).

Same way as other potatoes. I also had squash cut in strips like french fries the other day. They were batter-fried (lightly coated with flour and then fried.) Like them a lot, they looked like flimsy french fries.
