BBQ Rocks!! As long as you have the time & patience. Never stop monitoring that low heat, bud. Fruit wood is the sweetest. We got to use fig wood once. Awesome. But apple & cherry are great. Mesquite is the best standby. More mellow than hickory. It's the wood that makes it good. Memphis BBQ rules.

I love barbeque. I don't have that much experience in knowing what type of wood goes with which meat, but I love hickory and mesquite. Those are my favorites. I also love making ribs. Ribs are the best when doing barbecue.I just want to get a whole barbecue setup in my backyard so I can barbecue more. I would also like to know people that are experienced in barbecue so I can learn from them.

Well now you getting into my field lol. I have been smoking my own fish, deer, pork now for years.
I find that the wood needs to be either hard wood, or any fruit will do.
Forget any of the pines or cedars lol they are a mess, and food you can not eat it taste like pine trees.
Really most any hardwood tree will work good, as will the fruit trees.
The biggest thing with the taste is how you want to prepare it ahead of time.
For me I Start to prepare today what I am going to smoke tomorrow. Let it soak at least 24 hours is best before smoking.
I have a question up now about old time recipies for cooking. If any of you have a good one for smoking please add it there also ok.

Did I see somebody say "To Die For"?.....
Anyway, I was raised on Pork Shoulder pit cooked with hickory, in North Carolina.I now live in Texas, and the so-called barbecue here is not even close. Cooper's in Llano Tx is about as close as I've found.
By the way, Lexington, NC Has the best barbecue.

Yes, but after three times I tire of it. It is not a flavor (barbeque sauce) that I get a desire for. If it is served to me that 's okay but I am not big on it. Anything else cooked on the grill is just fine with me tho.

Yes! Prefer hickory or applewood, though wet pecan shells make some find smoke too! When we do it, we do some of everything: chicken, pork butt, brisket, and sausage for a couple hours for an appetizer.

Yes, I do. There is this place in Amber, Oklahoma that makes great smoked chicken breast. They use Mesquite wood.
