Beef Stroganoff Soup
1/4 C. butter
1 lb. tenderloin tips cubed
2 cloves garlic minced
12 oz. mushrooms sliced
1 large onion diced
1 C. shredded carrots
1 pint of water
1 T. beef base
Roux made of 1/2 C. butter and 1/2 C. flour
salt and pepper
1 pint of whipping cream
1/2 C. sour cream
1/4 C. chopped chives
In a 5 qt. pot, melt the butter and add tips, garlic. Cook until meat is browned, about 5 minutes.
Add mushrooms and onions. Saute until onion is translucent.
Add carrots, water, beef base, salt and pepper. Bring to a boil and simmer for 15 minutes.
Make roux by melting butter and add flour to it. Stir until smooth and cook 2 minutes. Gradually add to soup, stirring all the time. Add whipping cream and taste to adjust seasonings. Remove from heat and add sour cream.
Ladle soup into bowls and top with chives.
Makes 6 - 8 servings.
Fettuccine with Cream, Basil and Romano
Ingredients
(4 servings)
4 ea Bacon slices; chopped thick
1/2 c Whipping cream
1 x Or:
1/3 c Basil; chopped fresh
1 x Salt and freshly ground pepp
1 x Romano; freshly grated
4 ea Green onions; chopped
1/2 c Parmesan; freshly grated
1/2 c Romano; freshly grated
1/2 lb Fettuccine
1 x Parmesan; freshly grated
Instructions
Cook bacon in heavy medium skillet over medium heat until beginning to brown. Add green onions and stir until softened, about 1 minute. Add cream and simmer until beginning to thicken, about 1 minute. Mix in 1/2 cup Romano cheese and chopped fresh basil. Meanwhile, cook fettuccine in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return to hot pot. Add sauce and stir to coat. Season with salt and pepper. Serve immediately, passing additional cheese separately. *** My notes: When I made this, I used 1 cup whipping cream, 1/2 cup each Parmesan and Romano, 1 tbsp dried basil, and substituted 4 or 5 thin slices of Prosciutto for the bacon- frying slightly in butter. I used about 6 ounces of "Pesto Linguini", which is a thinner pasta containing basil. We like LOTS of sauce!
Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.
Garlic Chicken Breasts with Brown Sugar
1Tbs oil
6 or more garlic cloves, minced
1 Tbs brown sugar
3 boneless skinless chicken breasts
Preheat the oven to 500F.
Heat the oil over medium heat, add the minced garlic and cook slowly, stirring constantly, until softened. Make sure the oil is not too hot. You don't want to brown the garlic and it can get to that point quickly if you're not careful.
Take it off the heat after 5 minutes or so and add the brown sugar and stir it in.
Line a shallow roasting pan with foil and spread oil across the foil. Lay your boneless skinless chicken breasts across it, spread the garlic/oil/brown sugar mix across the chicken. Bake for 15 minutes, or until done.

I like to make and my family loves my pork chop dinner
4 pork chops
4 potatoes peeled and halved
1 can tomato sauce 1 can water
salt
pepper
flour for p/chops
heat a large skillet with just a little grease ( I use an electric frying pan) salt, pepper and flour chops. Place them in the hot pan just long enough to sear them on both sides. take them up and drain grease. Add sauce, water and potatoes to fry pan. Place chops on top and cover. turn down the heat and let it simmer for about an hour....or until potatoes are done. Serve with beans or some other side dish. There is never anything left when my family gets thru...LOL
You can add onions and carrots if desired.

Try chicken parm. Everything about this (except for the pasta) is home made here so it will impress everyone.
2 lbs. give or take of chicken tenders ...depends on how many you are serving. Coat them in this mixture:
1/2 canister of bread crumbs
2 palmfulls of grated parm
2 cloves of garlic smashed and chopped fine
chili flakes, salt, pepper and fresh or dried basil to taste.
Do the 'ol egg wash routine and coat your tenders...shallow fry them in olive oil that has been heating over medium low.
For a very quick home made sauce:
1 lrg can of crushed tomatoes
1 sm can of chunky crushed tomatoes or diced tomatoes
1 sm can of chicken or beef stock/broth
4 cloves of garlic popped and chopped
1/2 large white onion diced
fresh or dried basil
Saute the garlic and onions in some olive oil till clear...add the remaining ingredients and reduce the sauce to your desired thickness.
Place chicken tenders in a caserole and ladel over some of the sauce. Top with shredded or sliced motzerella and parm cheese. Pop in the oven at 350 till cheese is all melty. Serve with your favorite pasta. There should be extra sauce so that ppl can use as needed.

This recipe is a hit with my family. I make this at least once every two weeks. It's really easy, but it does take time to make so set aside 2 hours. When I make it after work, we don't get to eat until around 7pm, but my family doesn't mind the wait when it comes to this recipe.
Smothered Chicken
1 chicken, cut up (I use 2 packages of thighs)
1/2 plus 1/3 cup flour
1 1/2 teaspoons salt
1/4 teaspoon pepper
4 tablespoons butter
1/2 cup finely chopped brown onion
Wash chicken and pat dry. Combine the 1/2 cup flour, salt, and pepper. Roll chicken in flour mixture to coat. Heat butter in large heavy skillet. Brown chicken on all sides. Place chicken, skin-side up, in a 9 x 13-inch baking dish or roasting pan. Add onion to drippings in skillet; cook until soft. Add 1 1/2 cups water to skillet; bring to a boil. Pour over chicken. Cover tightly with a lid or foil. Bake at 350* for 60 minutes. Remove chicken and keep warm.
Carefully pour liquid from baking dish into skillet used for browning; bring to a boil. Combine the remaining 1/3 cup flour with 1 cup water; mix until smooth. Add to hot liquid. Cook, stirring constantly until gravy thickens. Taste for seasoning. Makes 4 servings (more if you use the thighs).
TIP: Gravy is delicious served over rice or mashed potatoes.

super easy and good chocolate cake
mix an egg with a cup of sugar for a minute. add half a cup of vegetable oil 3 table spoons of jam(any kind but it must be smooth with no chunks and don't skip the jam it makes the cake smoother) keep mixing. then add a cup of milk.then add 2 cups of flour a tea spoon of baking powder and three spoons of cocoa. mix of course.
grease a baking pan (dimensions width 20-24 centimeters or about 10 inches, lenght like 30-35cm or 13-14 inches) with oil or butter and powder it with flour. place the composition in the pan and bake for about 40 minutes (or until it's baked- stick a match into it and if it comes out clean it means it's baked) at medium heat.
let it get cold then pour on top of it melted chocolate(100 g) .if u want to u can sprinkle nuts or peanuts on the chocolate. after the chocolate cools cut it into equal squares.
it's really easy to make and it goes perfectly with cofee or milk

I package of angel hair pasta, 1 green,red and yellow pepper cut into bite sized pieces, 2 chicken breasts cut into bite sized pieces. Garlic, 2 tblsp of olive oil, salt and pepper. Start water to make pasta. Heat olive in a deep sautee pan. Brown cut up chicken on all sides. Remove and set aside. Sautee peppers until tender and then add the chicken and let finish cooking. Cook pasta until tender, drain well,add a little olive oil and toss. Salt and pepper to taste. Then add peppers and chicken

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

as much pasta as you want,, i prefer angel hair, thin spagetti, farfalle (bow ties) or shells, all 4 work well, take what you need for your family, italian dressing, parmasean cheese, and shrimp, or chicken,, whichever you prefer..... cook the pasta to directions, add the dressing and the p-cheese to your taste,,, its great and easy,,, cook the chicken or the shrimp in the oven in a casarole dish smothered with italian dressing till it is done,, anouther way to do it is just a little dressing,, just to coat the pasta, and ad a heap of p-cheese, while still in the pot,, keep warm till cheese melts a little, it is great,, follow that rest for the chicken or shrimp....

Depends on what you are looking for - meats, veggies, casseroles, etc.....I'm a third generation "southern country food" cook so I have tons but you need to narrow down what you like.....
