How about taco casserole?

Brown 2 lbs. ground beef mixed with 2 pkgs taco seasoning. Spread in bottom of casserole dish. Layer with the following: salsa, sour cream, shredded cheese, Tostitos, salsa and more cheese. Bake at 350 35-45 minutes until bubbly & serve!

Super easy: get about 4 boneless skinless chicken breasts. Chop up an onion and put it in the microwave with a little butter and terragon. Cook the onion for 5-6 minutes until done. Cover the dish while cooking to keep the microwave clean. If you're a purist, you could saute the onion, but the microwave saves time. Put a little butter in a skillet, and put in the chicken breasts. Add the flavored onion and cook until the chicken is completely done. The terragon adds a sweet flavor to the chicken that is unique. You could add things like carrots, raisins, and curry to this to make it even more interesting.

If you like veggies a lot this would serve as the base for a stir fry, too, with the vegetables of your choice.

Try these.

Meat Loaf
Brown Gravy
Mashed Potatoes
Green Beans or Broccoli Floretts or Brussel Sprouts with cheese sauce.
Pear Salad for dessert

Chicken and Dumplings (Mary B's frozen dumplings are wonderful)
Green Bean Casserole or Steamed Cabbage
Fried Green Tomatoes (optional)
Chilled Peach slices with Vanilla Wafers

Pot Roast (well seared on all sides and slow cooked in a crock pot) Use 3-4 Beef bullion cubes, 3-5 whole dried bay leaves and 5 table spoons of Kitchen Boquet.
Mashed Potatoes
Green Beans or Broccoli Floretts or Brussel Sprouts with cheese sauce.
Hard French Rolls to serve with the Au Jus

There are more..........but they involve rice.
Cooked these in the Fire Station where I worked for over 20 years.

You can get some great ideas from the food network and if you have TIVO then you can record some of the episodes that sound good.

You can make homemade mac n cheese in the oven, pot roast, Spanish rice, taco Salad, BBQ Pork or Chicken, sweet glazed ham, BLT Croissants are awesome and fast. You could put all the stuff in your crock pot for homemade veggie beef soup and then make grilled cheese. You can make a great dip with Velveeta, burger and ro tel chiles, just cook the burger and add the cheese and the chili's when it is melted serve with lime tortilla. You can also make chicken taco's as they are much healthier and a nice change. Sloppy Joe's are a good one in my house.

How about trying some of those recipes with Mexican or southwestern seasonings? Like instead of Philly cheeses steaks in the usual way put southwestern seasoning on the meat before you cook it and then roll it up in a flour tortilla instead of putting it on a roll. You could make a side dish of spicy beans mixed with that dreaded rice if you want to go Mexican as an accompaniment.

Boneless Chicken Breast, slice in thin pieces.
Salmon, slice in thin pieces.
Bath those slices in salt, black pepper...make sure not over done it.

Grill Green peppers, Red pepper, tomatoes and baby carrots. Season it with soya source while grilling. Cut it by quaters.

Now a slic at a time: Chicken slice 1st, then Salmon slice on top. Then a pieces of each of the vegies lay in middle and wrap with the two. Grill it again until the chicken cook.

You now have a plateful of unique fancy vegies meat rolls. Good with all kind of wines.

You could subsititute Chicken with Beef. I've never try Pork because I hardly touch pork.

Even better if you could locate those Japanese seaweed, the one use it for sushi. Cut it into strip and wrap in middle. Yummy.

Beef with Green Onion

INGREDIENTS:

* 3 tablespoons oyster sauce
* 1/2 teaspoon white sugar
* 2 teaspoons cornstarch
* 2 tablespoons peanut oil
* 1 pound flank steak, thinly sliced
* 6 green onions, cut into 1/2-inch pieces

DIRECTIONS:

1. In a small bowl, mix the sherry, oyster sauce, sugar, and cornstarch.
2. Heat the oil in a skillet, and cook the flank steak about 3 minutes. Stir in sherry sauce mixture. Add the green onions, and continue cooking 10 minutes, or until the flank steak is evenly brown and the green onions are tender.

Hmm, well, you could always try different ethnic dishes.

Look into these two websites for different ideas as well~

And here's a recipe idea ... Crispy Chicken & Parmesan Vegetables ...

4 chicken leg quarters (1-1/2 lb.), skin removed

2 cups 1-1/2-inch red pepper pieces (about 2 small peppers)
1/4 cup KRAFT Ranch Dressing
1/4 cup KRAFT 100% Grated Parmesan Cheese

PREHEAT oven to 375°F. Place potatoes in large microwaveable bowl or casserole dish; cover with vented plastic wrap or lid. Microwave on HIGH 7 min. Meanwhile, coat chicken with coating mix as directed on package. Place chicken in half of greased foil-lined 15x10x1-inch baking pan.
ADD peppers, dressing and Parmesan cheese to potatoes; toss to coat. Place in pan next to chicken.
BAKE 40 min. or until chicken is cooked through (180°F) and potatoes are tender.

I just gave this suggestion in another similar question

In medium roaster small red potatoes, carrots sliced, yellow beans, white onion sliced. add small amt oil, and water just to add liquid to bottom of pan.

Chicken breasts, (place in cassarole dish or you can buy throw away foil container) sprinkle sauce you like eg Kraft barbecue sauce or sweet n sour, whatever flavor.

Meatballs, you can buy Frozen readymade, then place in foil pan,also add on top one of sauce I mentioned, add small amt water. Meatballs have fat in them.

So, all these 3 items will cook together in the oven for about an Hour for the vegetables, maybe 15 to 20min more for the ChickenBreasts and Meatballs

Tossed Salad, lettuce, cauliflower pieces, cucumber sliced, parmesan cheese sprinkle on top. The dressing i use is Kraft Golden Italian.

For dessert, somethin simple
Vanilla Icecream with Frozen sliced Strawberries thawed. Could add shortbread or Pecan cookies in pkg at store, Peekfreans or Christie label not sure.
