I love egg sandwiches in the morning for breakfast. Just take an egg, beat it, and then put it in a tupperware that is microwave-safe and put it in the microwave for about 40 seconds. Then, put the egg on a toasted whole wheat English muffin with a slice of low-fat cheddar cheese with tomato. I like to melt the cheese on the tomato to make sure the sandwich stays together. It is really yummy!

How about a breakfast smoothie: mix about a cup of your favorite frozen fruit like strawberries, mangos, mixed berries, pineapples..and then I also like to add a fresh banana. Pour 1 cup of OJ into the mix, and add both into a blender. Blend away! Takes less than a minute, super healthy, fresh, and naturally sweet. Add some plain or lowfat vanilla yogurt if you want some extra protein and texture.

You can make a lot of breakfast foods ahead of time and have it ready just to pull out. Like hard boilded eggs, muffins, sliced fruits. Pancake Mix and Waffle mix can be made ahead of time and kept in the frig. Just pour and cook. They make Bacon and Sausage Links already made, just heat and eat. You can usually find those in low fat too.

Keep some leftovers...shredded cheese or chicken...in the fridge:

then whip up a nice western style omelett...nutritious and easy.
