i have a really easy recipe for peanut butter cookies
1 cup peanut butter
1 cup sugar
1 egg
1 tsp baking powder
mix first two together (can do it with a spoon) then add the egg and baking powder. mix till it's all smooth and mixed up. spoon onto a baking sheet and cook @350 for about 8-10 minutes. dont over cook em....u want them soft. thats it!!!!

Well If you like to grill chicken here is what I suggest.
Buy some frozen boneless chicken breasts (I like them because you can throw them in the freezer and use them whenever you want)
Then when you are ready to cook them I like to throw them in a dry pan at first to sort of brown the edges. Then put water in the pan to allow the middle of the chicken to cook. (You'll know it is cooked when there is NO pink left in the middle of the chicken I usually just cut into the thickest part of the chicken and look to see if it is white which means it is cooked DO NOT EAT pink chicken as it carries all sorts of diseases).
Now this is the fun part. Spice the chicken however you want personally I love to put some seasoning salts, garlic powder and good black pepper all of which can easily be found at the store but feel free to add whatever spices you like. The best part about this recipe is that you can add what you like.
Lastly to the chicken I like to put just a little soyo sauce (like the kind you get at oriental restaurants) and that gives the chicken a nice brown coloring and brings out a lot of flavor.
Now that the chicken is cooked it will go with anything. Sometimes I will slice it up and put it in a taco shell or put it with some pasta (alfredo is really good with this) or you can always leave it whole and put it on a bun and have a sandwich it will go with just about anything. You can also cook up some bacon and put it on any sandwiches too for some flavor.
The best part about this is that it is simple really only requires one pan and one plate (heck sometimes I just use a paper towel as my plate) and it only takes about 20 minutes to make plus you can customize it and do anything with the chicken.

ANOTHER good recipe if you want some breakfast
Take some frozen hashbrowns cook those up spice them nicely (same as with the chicken works well) Cook up some bacon and break it up into bits and mix it in with the hashbrowns add some cheese and you can use that as your morning side with the chicken or you can make eggs.

In the summer I always have a garden so there are plenty of fresh veggies. I take the best olive oil and saute fresh tomatoes, basil, and onions with fresh pressed garlic and serve it over pasta, or rice. For a simple side dish, I use those same ingredients but add eggplant, peppers, squash and mushrooms ect. The garlic and olive oil sort of roast the vegetables and bring out all the flavor in the world. Even people who don't care for eggplant or squash love the textures and flavors combined with the garlic. Also, you can add chicken, beef or tofu for a main course.

Title: FRIED SPRING ROLLS
Categories: Philippine, Appetizers
Yield: 30 rolls
3 c Oil
2 Cloves garlic, minced
1/2 lb Lean pork, ground
1/2 lb Shrimp, shelled, deveined,
-minced
3/4 c Minced water chestnuts
2 Carrots, minced
1 c Minced celery
1/2 c Green onions, cut very fine
2 tb Soy sauce
1 ts Salt (optional)
1/2 ts Freshly ground pepper
Spring roll wrappers, 8" in
-diameter
Sweet and Sour sauce
In a wok or pan, heat 2 tb oil. Add garlic and stir
until fragrant, about 5 seconds. Add the pork and
shrimp and stir-fry for 1 minute. Add the water
chestnuts, carrots, celery, and green onions. Stir-fry
for approximately 2 minutes, or until the vegetables
are tender but still crunchy. Add the soy sauce, salt,
and pepper. Stir. Remove from heat. Drain excess
moisture from pan.
To assemble the rolls, place about 1/3 c of the
filling on the lower third of the wrapper. Fold the
portion of the wrapper nearest you over the filling
until just covered. Turn the wrapper again to enclose
the filling securely. Moisten the edges of the wrapper
with water or a mixture of cornstarch and water. Fold
over the corners and press down firmly to seal, making
an envelope. Moisten the flap of the envelope with
water and turn, rolling firmly into a 1-inch cylinder.
Seal firmly. Set aside, seam side down. Repeat until
all the filling has been used.
Heat oil in a wok to 375 degrees. Place 4 or 5 rolls
at a time in the hot oil. Deep-fry until crisp and
golden. Remove with a skimmer and drain on paper
towels. Serve hot with Sweet and Sour sauce.
Rolls may be prepared ahead of time and frozen, then
fried when needed.

take boneless skinless chicken breasts and pound flat. Season with salt, pepper, and garlic powder. put a little oil in a skillet and brown on each side. Add a jar of green salsa over the top of the breasts, cover and simmer for 20 minutes. Remove cover and add grated cheese, and cover for another 5 minutes. May be served with any rice you like. It is delicious, easy, and you can add mushrooms if you want. It is sooo good.

The best prawns:
Get some jumbo prawns that are peeled and deveined.
Melt some butter and mix in garlic powder.
Brush the prawns with the butter and put a few inches from a preheated broiler for about 3 minutes.
So easy and SO YUMMY!
You can try dill, paprika, lemon pepper or any other spices you have too.

Chocolate Chip CookiesI
Ingredients:
Recommend this recipe to a friend
1 cup butter, softened
1/2 cup sugar
1 cup dark brown sugar
2 eggs
2 teaspoons vanilla
2 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips
Directions:
Cream butter and sugars. Add eggs, and continue to beat until light and fluffy. Add vanilla.
Mix flour, baking soda and salt together. Gradually add to creamed mixture and stir until combined. Stir in chocolate chips.
Drop by spoonfuls onto ungreased cookie sheet. Bake at 300 degrees F. for 18 to 24 minutes.

Easy Pot Roast
Ingredients:
1 tbsp. vegetable oil
3 lb. boneless beef bottom round OR chuck pot roast
2 cans (10 1/2 oz. each) Campbell's® Brown Gravy with Onions
2 tbsp. barbecue sauce (optional)
1 lb. baby whole carrots, cut into 2" pieces
Directions:
HEAT oil in saucepot. Add roast and cook until browned. Pour off fat.
ADD gravy and barbecue sauce. Heat to a boil. Cover and cook over low heat 1 1/2 hr.
ADD carrots. Cover and cook 1 hr. or until done. Slice beef and serve with gravy.

Honey mustard chicken
take boneless chicken chicken breast and rub with curry powder, paprika, salt and pepper. Place in baking pan. Make sauce by mixing Honey & Dijon mustard pour over top and bake about 45 minutes to 1 hour

In a skillet with a smidgen of olive oil, add:
finely cut onions, green peppers, yellow peppers....
sauteed....till wilted...
then add Tomatoes diced...add spices (salt, pepper, paprika, oregano) and let simmer together for half an hour or so...
Done!
You can put this on top of ready pizza crust, or toast, on top of noodles or rice, you can use this as a hot dip with chips, or as a side top your favorite meat dish. Fast, nutritious and yummy!
