I'm wanting to make something with with beet tips(fajita meat?) and shrimp. Prefferably fast cooking ideas.

Help me out?

Fajitas Santa Cruz

Prep: 10 minutes
Cook: 15 minutes
Servings: Serves 4
1 lb. beef skirt steak, cut across the grain into 1/4-inch strips
4 Tbsp. olive oil
4 cloves garlic, thinly sliced
8 mushrooms, quartered
1 red bell pepper, cut into strips
4 Tbsp. soy sauce
1/2 cup red wine
1/8 tsp. salt
1/8 tsp. pepper
Ancho Sauce:
1 ancho chile, stemmed, seeded and ribs removed
1 cup cold water
1 cup Crema Mexican Agria or sour cream
1/2 tsp. cayenne pepper
-- salt and pepper to taste




Heat oil in large skillet over medium-high heat. Add steak; stir-fry 2-3 minutes. Add garlic and continue to cook for 3 minutes. Add mushrooms and peppers; cook an additional 5 minutes.
In a small bowl combine soy sauce, wine, salt and pepper. Add to beef mixture; cook for 2-3 minutes. Remove from heat and serve with flour tortillas and Ancho Sauce.
Ancho Sauce: Soak Ancho chile in water for one hour or until softened; drain and reserve liquid. Transfer chile to blender; add Crema Mexican Agria and cayenne pepper; process until smooth. Add reserved liquid for a yogurt-like consistency. Salt and pepper to taste.


Quick and Easy Shrimp Fajitas

INGREDIENTS:
1 1/2 tablespoons vegetable oil, divided
1 green bell pepper, sliced
1 red bell pepper, sliced
1 pound medium shrimp - peeled and deveined
1 cup (1 small) chopped onion
1 (1.25 ounce) package taco seasoning mix
3 tablespoons water, or as needed
6 (10 inch) flour tortillas, warmed

DIRECTIONS:
Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the red and green bell peppers, and onion. Cook, stirring frequently until peppers are hot, but still slightly crisp, about 5 minutes. Remove from the skillet and set aside.
Pour the remaining 1/2 tablespoon of oil into the skillet, and add the shrimp. Cook, stirring occasionally, until pink and opaque. Reduce heat to low, and return the peppers and onion to the skillet. Stir in taco seasoning and water so that everything is evenly coated. Simmer until peppers are heated. Serve in warm tortillas.

this may sound strange but slow cook beef with BBQ sauce and rice boil shrimp with red pot. and corn on cob add shrimp boil to gooood stuff.
