1 lb. stew beef - cut into small pieces
2 minced garlic cloves
6 C. beef broth
4 C. water
1 14.5 oz. can of crushed tomatoes
1 1/2 C. onion chopped
1 1/2 C. diced carrots
1 C. diced celery
1/2 lb. chopped mushrooms
3/4 C. pearl barley
1 t. oregano
salt and pepper to taste
Brown stew beef in 5-6 qt. stock pan.
Add garlic, onions and cook for 3 minutes.
Add water, beef broth, tomatoes and cook until beef is tender, about 1 hour.
Add vegetables, barley and spices.
Cook 45 minutes or until barley is tender.

Beef Barley Soup
Makes 4 servings
Ingredients:
1 large parsnip, diced
1/4 cup chopped parsley
3 pound beef shin (or more)
1 3/4 quart water
2 carrots, diced
1 16 ounce can peeled tomatoes, crushed
2 stalks celery, diced
2 onions, chopped
salt and pepper to taste
2 cloves garlic, crushed
1 cup pearl barley
1 white turnip, diced
Preparation:
Place all ingredients, except barley, in a large pot. Bring to a boil. Lower to simmer and cook 2 1/2 hours. Add barley and cook until tender, Check package of barley for approximate timing. The meat can be served as a side dish to the soup with a dressing of mayonnaise and horseradish. Serve crusty bread also. Makes a great one dish meal.

BEEF AND BARLEY SOUP
1 lb stew beef or hamburger
8 cups water
1 pkg beef bouilliion
14 oz can of tomates
1 cup celery (chopped fine)
1 cup carrots
1 cup onoin
1/2 cup barley
1/4 cup parsley
salt and pepper to taste
garlic to taste (optional)
Brown beef In 2 tbls oil. Add 8 cups waater to pot and boil, then simmer 1 1/2 hours. Take out meat and shred (with hamburger you don't need to brown in oil or shred).
Dissolve bouillion in 1/2 cup of water. Add vegEtables and bouillion to pot. Add Barley, parsley spices and meat.
Simmer until barley is cooked.

INGREDIENTS:
1 1/2 pounds lean ground beef
1/2 cup chopped onion
1 clove garlic, minced
2/3 cup pearl barley
3 to 4 medium carrots, diced
3 ribs celery, diced
1 (28 oz.) can tomatoes
3 1/2 to 4 cups beef broth
2 c. water
1 (10 1/2 oz.) can tomato soup (optional)
1 bay leaf
1/4 c. minced parsley
Salt and pepper to taste
PREPARATION:
Brown ground beef, onion, and garlic in skillet; drain well. Transfer meat mixture to slow cooker; add barley and remaining ingredients. Cover and cook on high 1 hour then on low 5-6 hours.
Serves 6.
