ok my boyfriends mom used to make this all the time as she was from japan but she died and he doesnt have the recipe and i am wondering if anyone can give me a recipe to make rice cake with the sweet red bean filling.

It's daifuku. You'll find some recipes will list mochi-ko while others will list shiratama-ko. The only diffence is that shiratama-ko is finer than mochi-ko, so you'll get a smoother texture as a result.

The recipe on http://www.c4vct.com/kym/bento/ichigod.htm is pretty good. She didn't get the anko ball because her anko is not fine enough. The anko recipe here http://konny.fc2web.com/info/recipe_tsubuan_e.html would make a finer anko (koshi-an). If you want it even finer, see if you can find red bean powder.

It is actually called Red Bean Paste and you can buy it in China Town or any good Chinese market, Read a few books to make your own. Thedessert of a small fried rice ball with seasme seeds and paste in middle is called "Jin Doie" good luck!

You can make them but they are so sticky that you best just buy them at a Japanese store/grocery.
