First things first how are you cooking? on grill or fire? Some camp sites have grills that you can use, if not I suggest this:
Bring already prepared foods, if you have a cooler just about anything wil stay that you want. You will want to use your most perishable goods first. I suggest a nice cook out the first night. Bring hamburgers, Hotdogs, maybe Italian suasages (FREEZE THEM TO ADD COLD TO YOUR COOLER) then have all ready prepared coleslaw, salad, potatoe salad, macaroni salad, etc. (choose just one or two)
Then have bags of chips, candy bars, peanut butter crackers and littledebbie snacks for snacking on or desserts. Whenever I go camping I bring supplies for smores as well as little debbie snacks that we can use for deserts. It is awesome and really easy to do. When I go camping I go camping with 18 people and we do "real camping" where we are in the middle of the woods. I suggest having tons of cold drinks. Bring extra coolers it is better safe than sorry. You want your camping trip to be a happy one.
For your second night I suggest a chili in a large pot, you can also make this ahead of time and travel with it if you don't want to cook in the woods so much. If not chili you can always do sloppy Joes and chip or even nachos. Bring a bag of tortilla chips and a block of cheese then put the pot near the fire (not too close, because the cheese may burn) and have a great meal no one expects.
For breakfast I suggest milk + cereal, pre-made or pre cooked muffins, if your gonna go hiking this is REALLY great to do, eggs bacon and sausage is awesome if you really want to cook. With 18 people I ussually bring a variety of EVERYTHING. Everything from granola bars and pop tarts to full course breakfast meals.
For lunch people are less picky I suggest good lunch meats with good fresh bread and chips... This is also where those little debbies come in well too. Nobody wants to eat PB&J everyday unless you are 3. So try and bring your regular meals to the camp ground that you know everyone in your party will like.
By the way just a good all around experience tip BRING TONS OF BUG SPRAY AND CITRONELLA CANDLES BUGS LOVE THE FOOD!!! If you set up a bearer of candles around your camp area no one will have to keep swatting away unwanted bugs.

Don't necessarily limit yourself to a cooler. PB & J is always a good camping choice, as well as Smores. But bring a campstove so you can boil water for instant noodles, or even pasta, and bring a jar of pasta sauce and some pre-cut veggies. Hard cheese and crackers are good, and even fruit. A good rule for fresh produce is: unrefridgerated food lasts longer unrefridgerated, and refridgerated food lasts longer refridgerated. Basically, if you buy tomatoes from a grocery store in a chilled produce area, keep them in the cooler. If they were just hanging out in the normal temperature, don't cool them. Produce lasts days longer.
Anothe camp stove idea: a couple cans of beans, garlic, and tobasco for an easy, warm-you-up meal. Or wrap un-shucked corn on the cob in aluminum foil and stick in a fire. Don't forget tongs to grab them out of there.

Here's a recipe for Hobo Hamburgers:
1 1/2 lbs. ground beef
1 cup cracker crumbs
1beaten egg
1/4 cup lemon juice
1 cup grated cheese
1/2 cup chopped green pepper
4 med. red potatoes, sliced thin
1 large onion, sliced thin
4 carrots, peeled and cut into strips
4 slices bacon
salt, pepper, garlic powder to taste
Combine first six ingredients. Season with salt, pepper, and garlic powder. Shape into 4 patties. Place each patty on two layers of heavy duty foil, enough to cover and close. On each patty, place potato slices, onion, and carrot slices. Slice bacon in half and place on top. Seal aluminum foil tightly and place in campfire for about 45 minutes.
This recipe serves 4 so I'm sure you can figure out that you will have to more than double the recipe to serve 9. I usually assemble these ahead of time and pack in the cooler so they are ready to cook as soon as we get to camp. I do the same thing for S'mores. I make the sandwiches and wrap them in foil before we go and then after dinner, put them in the campfire for a few minutes and they are ready to eat. Sure hope you have fun!! Wish I was going!!

I camp with a large group-my family-every spring. I am a chef, so i am in charge of all the food planning. How long are you camping? We camp for one weekend. On friday night is our first meal. We usually eat after everyone has arrived and set up ttheir tent. I make Friday night's meal at home and bring it with me to heat up on site because it's hard to set up and cook at the same time. For these meals I try to stick to one dish wonders, like sloppy joes or stew. For the other meals, I have assigned other family members to bring key ingrediets so I'm not paying for all of it. For instance my brother brings the bacon I use in Saturday's bacon and eggs breakfast and the steaks for Saturday night. Saturdays lunch is just PB&J with chips on the gravel bar by our canoes. Sunday we have a pancake breakfast and leftover snacks for sunday lunch while we all tear down the tents and load our cars.

Make bean salad, take lima and butter beans, add italian dressing and keep cold.
Cut up veggies, put in individual zip locs and store in airtight containers, take some dill dipp premade from the store, or make some spinach dip. Ot take ranch dressing
meat and cheese roll ups...use ham and turkey, roll with different types of cheese and roll, place into airtight tupperware, take mustard for dipping.
Cut up cheese and salami and take a box of crackers, have some mustard (hot) or horseradish dipping sauce.
Make pasta: 1 box any noodle (I use rotini tri colored), cooked. Cut up veggies, such as broccoli cauliflower and carrots and add italian dressing, store in an airtight container.
You could make a pot of chili and take a large pot for reheating on the grill.
Peanut butter and jelly is a lifesaver at camp!!!

forzen hot dogs hamburgers and italian sausage also keep the cooler cold as long as you have some ice like in a plastic container it will be good for a couple days also keep the cooler isn the shade

Don't forget Paper plates/utensils/ BBQ utensils, couple of skillets, aluminum foil, SOS pads and dish soap, glasses, paper towels, garbage bags, can opener, sharp knife
